“The Monday Club”

This combination has quiclky become a mainstay on many pizza shop menus home and abroad. This is our take. Simple ingredients, paired with our light and crispy naturally fermented sourdough base. I can see why its up there in top sellers every week.

Seeing the pictures takes me back to the garden of our corrib student gaff. Slinging pies with the boys. Those were the days. 🍺🍕

An ode to our dough, the corner stone of any pizza shop. With us, you’re getting naturally leavened, sourdough powered beauties. Frank (yes we named our starter) clocks in daily and some weeks works harder than us.

Our entire dough process spans over 3-4 days, this not only provides immense bready savoury flavours, but also is easier to digest and leaves you feeling a bit better about milling a pizza. Not that you should feel guilty at all.

This one goes out to Frank, the greatest starter in the land.

This one celebrates all things Irish spring time.

Braised Irish lamb
Wild garlic & mint sauce
Confit potatoes
Cream base
Fior Di Latte
Shredded Wild Garlic.

Rich and luscious cream base, with class braised Irish lamb, tied together with wild garlic and mint.

I find it so exciting using wild garlic, the seasonality of it I think is why. It’s only around for 4-5 weeks a year. Thanks a million John.
