One of my favorite kinds of fall meals: simple, cozy and actually nourishing. 🍲

This red lentil soup comes together quickly with just a handful of ingredients and it’s packed with plant-based protein and fiber to help keep you satisfied.

Per serving, you’re getting approximately:
✨ 160 calories
✨ 12–14g protein
✨ 9–10g fiber

Add a slice of whole-grain bread and side salad and you have an easy, balanced meal for a chilly fall day.

Save this one for your next soup night! 🍂

Simple Red Lentil Soup 🍲

Ingredients

1 tbsp olive oil
1 medium onion, diced
1 cup red lentils, rinsed
1 can (14.5 oz) crushed tomatoes
4 cups chicken or vegetable broth
4 cups fresh spinach, chopped
1 tsp cumin
½ tsp paprika or smoked paprika
Salt & pepper to taste

Directions
Sauté onion in olive oil for 3–4 minutes. Add lentils, tomatoes, broth, cumin and paprika. Bring to a boil, then reduce heat and simmer for 20–25 minutes, until lentils are tender. Stir in spinach and cook 2–3 minutes until wilted. Season with salt and pepper.

One of my favorite ways to teach kids about nutrition? Get them in the kitchen! 👩🏼‍🍳

I recently had so much fun teaching a hands-on cooking class where we made three easy, healthy, kid-friendly recipes. We talked about basic cooking skills, the benefits of the ingredients we were using, and how fun it can be to try new foods.

I love helping kids build confidence around food and giving them simple skills they can use at home.

Dolly Parton was so much more than her music, her beauty, and her iconic style. ❤️

She was also refreshingly honest about food, dieting and her relationship with her weight.

Over the years, Dolly talked about trying diets, loving potatoes and other foods, and learning to eat smaller portions rather than completely giving up the foods she enjoyed.

And as a dietitian, I think there is an important lesson here:

We don’t need to spend our lives at war with food.

There will always be another diet.
Another food we’re told to avoid.
Another number on the scale we’re told we should reach.

But health is so much bigger than a number.

It’s about nourishing your body, enjoying food, moving your body, taking care of yourself and, perhaps most importantly- actually living your life.

It’s a good reminder that food is meant to nourish us AND be enjoyed.

And life is too short to spend it afraid of a potato. by @brynaratanutrition
