If I'm not sewing, I'm baking, and I love to bake in the fall. I kicked off my seasonal baking this year with a platterful of Pumpkin Whoopie Pies. Here's the recipe! Keep in mind that I've been making these for decades and I am not a pastry chef. I have no idea how to make these vegan or more healthy or what you can substitute for flour or sugar. They're a sweet, cozy autumn treat my family loves.

Pumpkin Whoopie Pies

Preheat the oven to 350°. Line 2 large cookie sheets with parchment paper. Set 12 Tbl butter out to soften. Do not heat the butter!!

Cookie:

2 cups AP flour

1 tsp baking powder

1/2 tsp baking soda

1 1/2 teaspoon cinnamon

1/2 tsp ginger

1/4 tsp cloves

1/4 tsp nutmeg

2 large eggs

1 1/4 cups packed light brown sugar

2/3 cups vegetable oil

1 tsp vanilla

1 cups canned pureed pumpkin

Filling:

1 1/4 cups powdered sugar (you can add more for stiffer filling but I don't)

12 Tbl soft butter, room temperature

1 1/2 tsp vanilla

1/8 tsp salt

2 1/2 cups (20 oz) marshmallow fluff

Cookies: Whisk dry ingredients together. Set aside.

Beat brown sugar and oil together until smooth. Beat in eggs. Add vanilla and pumpkin, stir until completely combined.

Stir in dry ingredients 1/4 cup at a time. Stir gently until no streaks of flour remain. Batter will be fairly thin.

Using a small cookie scoop or tablespoon, drop 1" apart on cookie sheets. Try to get each scoop about the same size. You should get 48 cookies from one batch of cookie batter. Bake for 11 minutes, until the tops of the cookies look dry and the bottoms just begin to brown. Don't overbake. Cool on wire racks before filling.

Filling:

Cream butter, sugar, salt and vanilla until fluffy. Beat in fluff until filling comes to soft peaks.

Sandwich pairs of cookies together with about 2 tsp of filling. Makes 24 2 1/2 sandwich cookies.
