🥣 Homemade Bone Marrow & Short Rib Soup

Hearty, flavorful, and the ultimate comfort meal!

🛒 INGREDIENTS

* 1 package beef chuck short ribs
* Beef marrow bones
* 1 yuca, peeled & chopped
* 4 plantains, peeled & chopped
* 1 white onion, chopped
* 1 cup chopped carrots & celery
* 3–4 bay leaves
* ½ head of garlic (optional, depending on your preference)
* 1–2 hot chili peppers
* Oregano
* Salt, pepper, cumin, garlic powder & onion powder (to taste)
* Olive oil for sautéing
* 10 cups water

🥑 GARNISH

* ½ avocado
* Fresh lime
* Chopped spring onions
* Pickled onions

👩🏽‍🍳 DIRECTIONS

1. Season and sear the short ribs until browned on all sides. Set aside.
2. In a large pot, heat olive oil and sauté the yuca and carrots for 3–5 minutes.
3. Add remaining vegetables, garlic, chili peppers, bay leaves, oregano, and seasonings. Mix for another 2–3 minutes, until the onions are translucent.
4. Pour in 10 cups of water, cover, and bring to a rolling boil.
5. Add the seared short ribs and marrow bones. Reduce heat and simmer for 90 minutes to 2 hours, or until the meat is tender and the vegetables are cooked through.
6. Serve with avocado, spring onions, pickled onions, and a squeeze of fresh lime.

Serve & enjoy!
