My favorite combo, always.

Slow-cooked pork with bamboo shoots, rich and deeply soulful, cooked the way it’s meant to be unhurried and full of flavor. Paired with sticky rice wrapped in tora paat, carrying that beautiful earthy aroma, this plate feels like comfort, memories, and home all in one. Some combinations don’t need anything extra they just need to be felt. 🍃🍚🥢 taken in Delhi - NCR by @by.milimeals

Pa:mnam Ongo

Steamed River Fish with Wild Herbs Wrapped in Tora Paat (Wild Cardamom Leaf)

Pa:mnam Ongo is a signature dish of the Mising community, celebrating the intimate relationship between river, forest, and home. Fresh river fish is gently marinated with wild herbs and spices, wrapped in fragrant tora paat (wild cardamom leaves), and steamed until tender. The result is a dish that is light, aromatic, and deeply comforting—simple in technique yet rich in tradition.

Ingredients
	•	Small river fish
(Rohu or Katla may be used as substitutes)
	•	Wild herbs (any mix of the following):
	•	Fish mint
	•	Culantro
	•	Dill leaves
	•	Ginger and garlic, roughly crushed
	•	Raw turmeric, crushed
	•	Fresh peppercorns, lightly crushed
	•	Bird’s eye chili, to taste
	•	Salt, to taste
	•	Mustard oil, a light drizzle
	•	Tora paat (wild cardamom leaves), for wrapping

Method
	1.	Clean the Fish
Remove the innards. Wash thoroughly under running water and pat dry.
	2.	Prepare the Marinade
In a bowl, combine the fish with crushed ginger and garlic, raw turmeric, fresh peppercorns, wild herbs, salt, and bird’s eye chili. Mix gently to coat evenly.
	3.	Add Mustard Oil
Drizzle a little mustard oil and fold lightly to enhance aroma.
	4.	Wrap in Tora Paat
Place the marinated fish onto a tora paat leaf and fold securely into a tight parcel.
	5.	Steam
Steam the wrapped fish over medium heat until the fish is tender and infused with the fragrance of the leaf.
	6.	Serve
Serve warm. The moment of opening the leaf—releasing steam and aroma—is an essential part of the Pa:mnam Ongo experience.

Serving Suggestion

Enjoy Pa:mnam Ongo hot, freshly steamed. It pairs beautifully with:
	•	Steamed rice or joha rice
	•	Traditional rice beer (Apong)
	•	Light dal or herb-infused broth
	•	Boiled seasonal vegetables

For added freshness, serve with a squeeze of Kaji Nemu or a simple chili chutney. taken in Delhi - NCR by @by.milimeals

Lígang on my plate! 🌾✨

Purang apin at the heart of the plate — because Ligang begins with it.
As Ligang comes closer, the flavours arrive first.

Soft, comforting purang apin as the main, accompanied by péréd oying slow-cooked to warmth and Baanam aadín (roasted pork) rich with smoky goodness.
On the side, red dry chili roasted and ground with salt (sitir) and maan dhaniya king chili chutney adding balance and heat 🌶️
And poro apong — the traditional black rice beer poured gently, the soul of every Ligang gathering.

This plate isn’t just food; it’s culture, memory, and celebration served together.
Ligang is coming — and the feast has already begun. 🤍 taken in Delhi - NCR by @by.milimeals
