MEET THE CREW

Meet Eric Rahlfs — the creator behind @cafe_realm , turning everyday meals into griddle masterpieces on the Blackstone. 🔥

After discovering the griddle in 2020, Eric began sharing his cooks online with Flat Iron Friday, posting a new dish every week.

Go-to dish? Smash burgers — perfectly crispy patties with toppings like bacon and a drippy egg cooked right alongside. 🍔

Top tip: use multiple heat zones. A hot zone for searing, medium for cooking, and a cooler area for resting keeps everything timed perfectly.

Favorite moment so far? Attending the Blackstone Social Summit and connecting with the amazing Griddle Crew community. 🙌

Tonight we ventured out to 1762 formerly known as the Warwick Hotel in Hummelstown, PA!! Known for their crab cakes I had to give it a try with a side of coleslaw and shaved brussel sprouts. I paired it with their 1762 Manhattan!!! Oh this was so good! If you get the chance definitely stop here for a meal!! taken in The 1762 At The Warwick Hotel by @cafe_realm

Welcome to Flat Iron Friday!!

🔥 Chicken Hibachi on the Blackstone! 🔥

Tender, seasoned chicken, crispy hibachi-style rice, and fresh shredded carrots—all cooked together on the griddle!

Short on time? Bachan’s Japanese BBQ Sauce is a great shortcut—just toss it with your chicken and rice for a quick hit of sweet, savory Japanese BBQ flavor without all the extra prep.

There are times when you have to cook in the dark!! How often do you cook in the dark?? What have you cooked in the dark?? Here we cooked up strip steaks on the Blackstone and they were probably the best steaks I’ve cooked!! Maybe that’s my sign to cook more in the dark!! 🤣 🤣
