Kwéyòl Eggplant Adobo
Mixing of methods and ingredients of Dominican style Stew chicken and Philippine Chicken Adobo but with eggplants. 

Kwéyòl Eggplant Adobo
Ingredients for 4 Persons

2 large eggplants – different variations if you like
Salt
4 garlic cloves
1 tsp Adobo seasoning or allpurpose (optional) / or simply onion powder
Some thyme (optional)
4 tbsp vegetable oil
2 tsp peppercorns
1 cassia cinnamon stick (the thick variety)
2 tbsp sugar
40 ml white/cane vinegar
80 ml soy sauce
3 bay leaves
(3 Dominican bay leaves)

Recipe 

1. Cut the eggplant into large pieces or cubes. You don’t want them too small, as it’s nice to have a little bite.

2. Salt the eggplants with about 1 tsp salt and leave them for about 30 minutes to pull out some of their water.

3. Toast your spices. Put the peppercorns, bay leaves, and cinnamon in a small frying pan and toast on medium heat until fragrant. This will amp up the flavour of the spices. Put aside for later.

4. Drain the water from the eggplants and season with some Goya Adobo (or onion powder), 2 chopped garlic cloves, half of the peppercorns, bay leaves, and cinnamon, plus 2 tbsp of oil. Marinate for as long as you like.

5. Put 2–3 tbsp of oil in a pan and heat it up. Add 1–2 tbsp of sugar and let it caramelise until golden brown. Caution!Keep your eye on the caramel at all times, as it can burn quickly. As soon as it reaches a deep golden-brown colour, add the eggplants and fry for a couple of minutes. Add the remaining garlic cloves, either smashed or diced.

6. Now add the vinegar and let it evaporate for about 2 minutes to reduce the acidity.

7. Add the soy sauce and remaining spices. Cook for 30 seconds to reduce slightly, then add enough water so that the eggplants are almost, but not quite, covered.

8. Cook the eggplants until they are super soft and the sauce is glossy and sticky.

9. Season with extra soy sauce, vinegar, or sugar to your desired taste.

10. Enjoy with some steamed rice and thinly sliced spring onion

Recorded in Paris 12 years ago with the full band, this album almost never made it out. Gabriel Carb with the Dominican Reggae Band Collective Security pulled it back from a label that wanted to own the Record. Then his computer got stolen. The last copy ended up on a harddisk of my mother’s: she got it after hearing him play it once at mutual friends, just feeling the music and keeping it safe without knowing what it would become.

12 years later, a call.
We opened the encrypted harddisk. The music was still there.
Right away, We said it should come out through the idea i‘ve been carrying: a not-for-profit collective label, where the music stays with the artist.

First Single: “Happiness” by Collective Security.

Reggae with a clear Dominican flavour!

Talking resistance. Babylon system. Youth being misled. Happiness and depression. Nature. Rastafari spirituality.

The title track starts:
„Happiness, can’t leave me alone
Loneliness can’t see me through“

And it pulls you straight in.

Roots style cooking at @free.up.farm 🌿

Today is a Roast Pepe (breadfruit) base, with a herbsalt crusted grilled Yellowfin Tuna I get in Possie Market. With that is a fresh coconut milk, citrus vinaigrette with herbs like lemongrass, lime leaf, basilic, chado beni & ginger.

Trying to combine Dominican techniques and ingredients with plenty different influences — showing how much goes behind cooking food with Nature from scratch.

All ingredients, except for the fish, was picked at Freeup Farm in Syndicate Dominica just before filming the video. 

On the music we have the legendary Dominican Reggae artist Nasio Fontaine 🇩🇲

This the first post from Calabash — the symbol of a fruit which is used to make „bowls“ to hold things in their natural form. Moving away from the usual label structure, just existing as a space where food, music, art and storytelling can live together. More to come soon 💚💛❤️
