Kwéyòl Eggplant Adobo
Mixing of methods and ingredients of Dominican style Stew chicken and Philippine Chicken Adobo but with eggplants. 

Kwéyòl Eggplant Adobo
Ingredients for 4 Persons

2 large eggplants – different variations if you like
Salt
4 garlic cloves
1 tsp Adobo seasoning or allpurpose (optional) / or simply onion powder
Some thyme (optional)
4 tbsp vegetable oil
2 tsp peppercorns
1 cassia cinnamon stick (the thick variety)
2 tbsp sugar
40 ml white/cane vinegar
80 ml soy sauce
3 bay leaves
(3 Dominican bay leaves)

Recipe 

1. Cut the eggplant into large pieces or cubes. You don’t want them too small, as it’s nice to have a little bite.

2. Salt the eggplants with about 1 tsp salt and leave them for about 30 minutes to pull out some of their water.

3. Toast your spices. Put the peppercorns, bay leaves, and cinnamon in a small frying pan and toast on medium heat until fragrant. This will amp up the flavour of the spices. Put aside for later.

4. Drain the water from the eggplants and season with some Goya Adobo (or onion powder), 2 chopped garlic cloves, half of the peppercorns, bay leaves, and cinnamon, plus 2 tbsp of oil. Marinate for as long as you like.

5. Put 2–3 tbsp of oil in a pan and heat it up. Add 1–2 tbsp of sugar and let it caramelise until golden brown. Caution!Keep your eye on the caramel at all times, as it can burn quickly. As soon as it reaches a deep golden-brown colour, add the eggplants and fry for a couple of minutes. Add the remaining garlic cloves, either smashed or diced.

6. Now add the vinegar and let it evaporate for about 2 minutes to reduce the acidity.

7. Add the soy sauce and remaining spices. Cook for 30 seconds to reduce slightly, then add enough water so that the eggplants are almost, but not quite, covered.

8. Cook the eggplants until they are super soft and the sauce is glossy and sticky.

9. Season with extra soy sauce, vinegar, or sugar to your desired taste.

10. Enjoy with some steamed rice and thinly sliced spring onion

Had Pull up with the @calabash767 mobile kitchen to make bakes for a 24hr Rave at @zentralwaescherei in april making sure people get a nice likkle food. Sharing the Love, Food and Culture of Dominica in Zürich. U kno already! 

This summer must pullup some places wit the mobile kitchen to make some bakes and create a likkle caribbean Oasis with vibes, music and food with @calabash767 ;)

Pick ur local Elderflower / Holunder and make Syrup;)

U done kno mines have a likkle @free.up.farm Tonka and Fresh Bayleaf from Dominica for some Spice ;) and it must taste nice mix with a likkle rum, fresh tonka grated on top, lime and some bitters 

If u want to make too:

- help urself to the local elderflowers around ;) MAKE SURE YOU PICK THE RIGHT ONES! 
- let Cold infuse overnight or longer with water (make sure to write down how much water) 
- add same amount of sugar as water (i added 50/50 brown and white) and some Lemons for taste and Preservation - also any spices u want to add. 
- optionally add some citric acid aswell for preservation (ask the internet the percentage of your whole syrup)
- start to heat up the syrup - strain out Flowers when its getting too hot to touch. YOU DONT WANT TO BOIL THE FLOWERS! it will give a bitter sidenote.
- sterilize the bottles! Wash with soap - then either boil or heat in oven at 110-120 for about 15 mins. 
- Heat the strained syrup to just before boiling. Bottle into sterilized jars. Work clean ;)

IF YOU WANT - PLAY AROUND WITH DIFFERENT SPICES/ CITRUS, etc…

Pick your local stinging nettle and make Pesto

Recipe:

- Young top leaves of Stinging nettle (wear gloves to collect!) - make sure to pick them at a safe, clean spot where there always make sure to pick from safe, clean spot. 
( +any other herbs u want to add: i added some wild garlic i found in my backyard)
- Parmesan
- roasted cashews (180* in oven 10 mins ) / or Pine nuts / or haselnuts (whatever u have and prefer)
- lemon zest
- salt 
- garlic
- shitload of olive oil

Wash the greens. Then blanch them in boiling water for 1 min! This takes away the stinging from the leaves! Shock them in ice cold water instantly. Then blend together with the rest of the ingredients. Make sure to toast or roast your nuts for flavorful nutty aroma. 

If you want it vegan you can add toasted breadcrumbs instead of parmesan. 

U done kno! Add it to pasta, in sandwhiches, risotto, wherever u want. 

Nettles are super healthy! Full of Nutrients, high in Iron, calcium and vitamin K and great antioxidant:)
