Restaurant owners: this week in restaurants, the biggest stories were about money you already owe or already pay.

1. Covid loans. The Guardian (16 Oct) reports over 30% of Covid disaster loans are in default. A loan 120 days late goes to the Treasury, and fees add about 30%. Loans over $200,000 carry a personal guarantee.
2. Menu prices. The BLS (14 Oct): restaurant prices up 3.5% in a year, groceries up 1.8%, real hourly pay down 0.7%.
3. POS cash advances. In Nation's Restaurant News (14 Oct), a debt expert showed a 1.3 factor rate turns $50,000 into $65,000 owed, with 15% of every card sale held back.
4. KFC ends its 40 year Pepsi deal in the US and pours Coca-Cola everywhere by spring 2027 (NRN, 15 Oct).
5. Salad and Go's brand and 30+ sites sold for nearly $16 million after its August bankruptcy (Restaurant Dive, 16 Oct).

Save this for the day an SBA letter or a POS cash offer lands on your desk.
Send it to the owner who took a Covid loan in 2021 and has not opened the SBA letters since.

Which one changes your week? Comment the number.

This is news, not financial advice. Talk to the SBA or your accountant before you change a payment.

Restaurant owners: Google's new restaurant list counted every search for directions, not just your reviews.

On 8 October Google Maps named its first Fan-Favorite Dining List in 10 cities. It was built from a year of reviews, ratings and searches for directions. Most owners only ever watch the first one.

Here is how to move all three this month:

• Test your pin. Search your name in Google Maps from a block away and tap Directions. Wrong door? Edit profile, Location, Business location, Adjust, Save.
• Set your Thanksgiving hours now, even if they match your normal hours. Edit profile, Hours, Special hours, Add a date.
• Name your dishes. "Chef's Special" cannot trend. "Brown butter focaccia" can. Edit menu, Add menu item.
• Ask every guest for a review the same way, after the visit. Never ask them to mention a dish. Google's review policy bans it.
• Reply to every review, good and bad.

Save this for the Monday you sit down with your Google profile.
Send it to the owner who read the list and said "that's just big cities".

Search your own name today and tap Directions. Where did your route end? Tell us in the comments.

Restaurant owners: the fuel surcharge on your food invoice is charged per delivery, not per case.

Four numbers:
$6.18. US average diesel, week of 12 October (EIA).
+$2.51. The rise on the same week last year.
$12. What one national distributor's published grid adds to each delivery when diesel sits between $6.00 and $6.49.
$3,120. Five deliveries a week at $12, for a year.

A truck with one case pays the same fuel line as a truck with forty. So the cheapest fix this winter is fewer, fuller drops. Three a week instead of five keeps $1,248 on that grid. Your contract and your region may differ, so read the fuel line on your last invoice.

Send this to the owner who takes produce, dairy and dry goods on different days because that is how the rep set it up.

How many deliveries do you take a week? Be exact.

Sources: EIA Gasoline and Diesel Fuel Update, US Foods and Performance Foodservice fuel surcharge notices.

Restaurant owners: your opening manager cut a server at 6pm. Your closing manager wants her back.

Neither one says it to the other. Both say it to the bartender.
By close, the kitchen has picked one side and the floor has picked the other.
You hear about it on Monday, as a resignation.

They are not fighting about policy. Nobody ever wrote down who decides.
One page settles it: each call that keeps causing a fight, the one person who makes it, and your signature at the bottom.

Send this to the owner with an AM manager and a PM manager who "just need to get along".

Who decides when a server gets cut in your place? One name, or two?

Cafe owners: your iPhone camera changed in iOS 27, and five settings decide if your pastry case looks fresh or flat online.

Today was line 18 of our scorecard. Comment SCORE and we will send you the other 19.

Most food photo advice stops at "use natural light". The bigger problem is a camera you never set up, so every photo comes out a different shape and brightness.

Set it once:

1. Open Camera, tap the tools button, tap Edit, add Exposure and Aspect, then tap Done.
2. Tap Aspect and pick 4:3. Hold the phone upright. Instagram crops your grid to 3:4 tiles and feed posts stop at 4:5, so 4:3 upright fits both.
3. Tap 2x and take one step back. No more leaning over the glass.
4. Touch and hold the food until AE/AF Lock shows, then drag the sun down a little so a white plate keeps its detail.
5. Settings, Camera, turn on Grid and Level. Then Preserve Settings, turn on Exposure Adjustment.

Save this for the next quiet afternoon when you have ten minutes and your phone.

Send it to the friend who shoots their pastry case at 7am under the strip lights and wonders why it looks flat.

Comment SCORE for the full 20 point scorecard.

Restaurant owners: there are two ways to cut the same 40 minutes of labor, and only one of them stays cut.

On the timecard, a manager moves the clock-out to 10:00 while side work runs to 10:40. The labor report looks better. The server sees it on payday.

On the schedule, you:
• cut the last hour using your sales by hour report
• send the first person home at the first slow stretch, not at close
• start side work before close, so closing is shorter

Under federal law, the Labor Department can recover unpaid wages plus an equal amount in damages. State rules can add more. Check yours.

On Toast, the check takes one screen: Reports, Labor, Time entry audits. Read it once a week before payroll goes out.

Send this to the owner whose labor comes in at the same neat percentage every week and who has never asked how.

Who checks the punch edits in your place, and how often?

Restaurant owners, a founder note from Sufyan at Calode.

We teach restaurants how to grow online. On 22 September we cut our own page from five posts a day to one.

The honest numbers since then: 10 posts, 8 likes, 0 comments, 9 days we missed, and 239 followers, down from 265.

Most of that is on us. We broke our own rule of one post every day, and we never went out and talked to anyone.

So the plan stays. One post a day at the same time, real comments on other owners' posts every day, and the numbers posted here again in early November, good or bad.

Send this to the friend who opened this year and posts every day to almost nobody. They are not the only one.

What moved your page when it was this quiet?

Restaurant owners: the week in restaurant news, 4 to 10 October, in five stories you can act on.

1. Diesel is $6.20 a gallon, up $2.49 on a year ago (EIA, week of 5 Oct). US Foods publishes a surcharge grid that adds $1 to each delivery for every 50 cents diesel rises. Read the fuel line on your next invoice and ask if fewer, fuller drops would cut it.

2. Uber Eats is buying ezCater for $2.3 billion (Restaurant Dive, 6 Oct). ezCater has 140,000+ restaurant partners and a $400+ average order. Save a copy of your current terms.

3. Google Maps named its first Fan-Favorite restaurants in 10 cities, five in the US, from a year of reviews, ratings and direction requests (NRN, 8 Oct).

4. Kura Sushi swapped its 300 point sign-up bonus for a free soft drink on joining (Restaurant Dive, 7 Oct). The first reward now lands on day one.

5. McDonald's says it does not use AI to change prices in real time. Its tools recommend prices per restaurant and franchisees decide (Restaurant Dive, 5 Oct).

Save this for Monday, when you sit down with the invoices.
Send it to the owner who signs the produce invoice without reading the fuel line.

Which one lands on your desk first? Comment the number.

Restaurant owners: the way you ask for Google reviews can get your real reviews removed.

Most advice says ask the happy tables, get servers to ask, maybe give a free dessert. Google's own policy bans all three.

What Google bans:
• Any reward for a review: payment, a discount, a free item
• Asking only the guests who look happy
• Pressure to review while they are still inside
• Asking guests to name a staff member
• Review targets for your staff

What Google can do: remove reviews, hide them, block new ones for a while, and show guests a banner saying suspicious reviews were removed.

The fair way:
• Copy your link: Read reviews, then Get more reviews, then Share
• Text every guest who ordered, the morning after
• Same words for everyone: "If you have a minute, we would love an honest Google review. Good or bad, we read every one."
• Put the link on receipts and in takeaway bags
• Reply to every review, good and bad

Save this for your next staff meeting, before anyone prints a new table card.

Send it to the owner who pays servers a bonus when a review names them.
