⚽️ Also, we’re opening up more tickets to the games this weekend — The Kickback opens today at 7:00 for USA v Turkey, then all day Friday and Saturday. See you there!

This was never supposed to leave the building.

Six years ago we set out to create a book. Somewhere along the way, we realized what our restaurant needed wasn’t a coffee table book—it needed a manual.

Part history book, part manifesto, and part yearbook, The Manual, Vol. 01 is our attempt to capture who we are, what we believe about hospitality, and the stories that shaped this place.

For our 75th anniversary, We’ve decided to sell 75 copies to raise both funds and awareness for our friends over at Vision House, a Seattle organization providing housing to families experiencing homelessness.

The other night, we opened something extraordinary: a 56-year-old single malt—one of only a handful of bottles in the world. After a 5+ decades-long wait on the quiet shores of Orkney, it spent its last night in Seattle. Canlis and @highlandparkofficial came together for a day of exploring whisky, sharing stories, and a delicious meal from Chef James Huffman. It was an evening to celebrate people and story with long patience and fine craft. Some bottles you collect. Others—our favorites—you open with friends. These are the nights we live for. by @canlisrestaurant

I’m a huge fan of what’s happening at @ferndalefarmsteadcheese just a couple hours North of the Canlis kitchen. They make an incredible parmesan, so good that we nearly bought them out of it. Three generations of the Wavrin family are making world-class cheese right in our backyard. by @canlisrestaurant
