Tonight was one of those pinch-me experiences. Our kids gifted us an in-home, six-course dinner with a professional chef for Christmas last year, and we finally cashed it in — and wow, was it worth the wait.

Watching a professional chef cook in our own kitchen, hearing the stories behind his craft, enjoying great conversation, and then sitting down to an absolutely incredible meal made the whole evening feel extra special. We chose a Latin American–inspired menu, and every course delivered.

Photos of everything… even the lamb chop I started eating before remembering my phone. Zero regrets.

Menu highlights:
• Mojo marinated pork belly with cilantro black bean purée & crackling
• Beef empanadas with avocado crème
• Lamb with chimichurri
• Chilean sea bass a la Veracruzana with saffron-lime broth
• Skirt steak with black garlic mole over huitlacoche rice
• Mexican chocolate torte

An amazing experience from start to finish — great food, great conversation, and a night we’ll remember for a long time. Chef Decardios knocked it out of the park.

Peach Whiskey Chicken served over fresh mashed potatoes! So so good! Great meal for a crowd. I made it with boneless skinless chicken thighs but the recipe calls for bone-in/skin-on. Twelve chicken thighs. We’ve taken a trip around the world the past few days. We started with an Italian dish on Saturday. Yesterday was Greek with Chicken Souvlaki with Tzatziki Sauce and Greek Lemon Roasted Potatoes. Less than thrilled with the potatoes but I have already found a backup recipe but the chicken and tzatziki were spot on. Tonight we took on the flavors of Thailand with a fresh and very tasty Thai Crunch Chicken Salad with Peanut Dressing. Thanks @gimmesomeoven for the salad recipe!! Threw in a pic of the sink so you know I cook just like everyone else. I try to use every dish in the kitchen when I cook!! My first salad bowl was too small! What do I do with all of the leftover salad???? Don’t think I can throw this in the freezer and expect a good outcome!🤣

Fresh sourdough loaf today. I did a couple of change ups on the prep and was worried I made a critical error but it turned out great. I couldn’t wait for David to get home to cut into this one, sorry babe! I did put the two halves back together… he wanted to know why I cut it in half, as opposed to cutting from one end. I barely waited the one hour after removing from the oven Love Plugra Salted Butter on fresh, still slightly warm piece of bread.

Mojo Chicken and Pineapple from @nytcooking! Great meal with so much flavor. I could have eaten the mojo sauce with chips and then you add in the charred pineapple and it took the flavor over the top! Served the dish over a bed of long grain rice and a side of fresh roasted corn cut from the cob. Cuban dish or Canary Island dish… you decide, I don’t care it was so tasty! Carne Guisada or Carne Guisada con Papas, doesn’t matter what you call it this recipe was a win. It will definitely go in the vault for a future repeat. So rich in flavor after 6 hours in the slow cooker. ⚜️Sunday Saints⚜️ game food, the meal was way better than the game!
