When I was a child one of the first things I learned to cook was tuna noodle casserole. I loved making the cheese sauce which was a basic bechamel with an entire cup of American cheese! (Velveeta was not allowed in our house lol!) I no longer eat tuna, egg noodles, or cheese but I still crave a good, creamy bechamel sauce. Who doesn’t love creamy comfort food?? Tonight I am making a baked broccoli and potato casserole with a dairy free bechamel made from extra virgin olive oil, gluten free flour blend, coconut milk and almond milk. It is so rich and satisfying! Obviously this is not a low fat recipe - but replacing butter and dairy cream with healthier options does improve it and the fat content comes in just under 10 grams per serving. One of my favorite @medicalmedium recipes is the chickpea scramble. Does it taste like eggs- no. But it is very satisfying and sort of like having an omelette. And so nutritious! @medicalmedium pharmaceutical exposure juice shot! You can feel this working in your brain and body right after you drink it! After having surgery with general anesthesia last week I felt like crap.
