This is an Organic Apple. It has been sitting in my kitchen at room temperature for 3 months. It feels slightly waxy on the outside but is still smooth and shinny. When I was a kid apples used to wither and wrinkle in a couple weeks. We'd make dolls that looked like old ladies out of them. Hummm, Did you know that I-Methylcyclopropene (1-MCP) is a legal chemical for Organic produce? 1-MCP is a chemical used to slow down fruit ripening by preventing ethylene from binding to it's receptors. Ethylene is a natural plant hormone that triggers ripening and 1-MCP acts as a competitive inhibitor, blocking ethylene's hormonal effects. 1-MCP is a synthetic hydrocarbon gas produced through a chemical reaction involving methallyl chloride and phenyllithium. It's commercially stabilized by encapsulating it within alpha-cyclodextrin, often sold under brands like "SmartFresh".
