I went to the butcher to buy some oxtail… 🐂

But when I was leaving, the SAME COW I thought I was taking home waved its tail at me. 😭

So naturally, I waved back politely. 👋🏾😂

Got home, opened the bag and realized the butcher sold me VEGAN OXTAIL! 🌱

I was gonna take it back… but after that cow waved goodbye, I just couldn’t do it. 😂

So we switched plans and made VEGAN OXTAIL RAMEN 🍜🔥

🌱 Vegan oxtail
🍄 King oyster mushrooms
🥕 Carrots
🥬 Bok choy
🥥 Red curry coconut broth
🍋‍🟩 Lime
🌿 Fresh basil

Listen… that cow knew EXACTLY what he was doing. 😭😂

Would you try this ramen?

I know I’m not the only one always trying to figure out something new for dinner 😂. Sometimes I just go with the flow… and this one flowed REAL well! 😮‍💨🔥

I made pizza dough from scratch a few days earlier, had these mushrooms on hand, and made a maple spicy sauce—not too spicy, just the perfect balance of sweet and heat. So why not turn it all into a sandwich? 🍄🥪🌱

I used the dough to make a soft, garlicky bun, then added the mushrooms as the “meat,” topped it with that delicious maple spicy sauce, added pickled jalapeño peppers for an extra kick, and finished it with homemade vegan ranch dressing. Sometimes the best meals aren’t planned—they just come together!

Would you try this mushroom sandwich? 👀👇🏾

This ain’t your regular chopped cheese! 😮‍💨🔥

Sautéed peppers, onions and garlic mixed with seasoned plant-based beef, melted Violife cheese, banana peppers, vegan mayo, ketchup and shredded lettuce—all loaded onto a toasted hoagie roll and served with chips.

Messy, cheesy and completely plant-based! Who’s taking the first bite? 👀

Save this, share it with a chopped-cheese lover and follow @vegan_on_the_island for more vegan comfort food.
