With the clock ticking before he hit the stage at the 2026 Australian Native Food Festival, Colin Fassnidge @cfassnidge was having an eggcellent time cooking up his Irish curry with a very Australian twist.

He’s coined it the Indigifass Curry, packed with native ingredients including pepperberry, warrigal greens, samphire, native turmeric, native curry leaf, lemon myrtle and bush tomato.

And that’s the point. Native ingredients can work across so many cuisines. It’s all about flavour, balance and understanding how to use them. They can add complexity and depth to the food we already know and love, bringing a whole new dimension to everyday cooking.

Luckily, Chef Zach Green @thestorytellerchef had Colin’s back, keeping a very keen eye on the eggs to make sure the dish landed with the guests in the audience exactly as intended.
