salted miso caramel brownies ✨🍯

a long overdue post from may, when this was still a trend !!!

i made these brownies for work's biggest morning tea initiative, where everyone makes or brings in baked goods to be auctioned off to raise money for @cancercouncil (and win points for our teams ❤️) and thought to marry my love for dark, rich cocoa, sweet buttery dulce de leche, and salty, smooth, umami miso 😋 imo - could've used wayyy more miso !!!

this week actually marks my 6 months of working full time in the flavour industry and i have loved every second of it!!! i have learnt so much about the food industry just through flavours - bring on the next 6 months ‼️🎨

some fabulous eats so far this year that have left a lasting impression on me 🪩✨🪷

this year has been....nothing like i could've ever expected it to be 😭 starting full time work, leaving behind uni life, moving out, changing relationships, getting lost in between ... and trying to find myself again ❤️‍🩹🧸

i feel as though i haven't given enough time and attention for myself to enjoy doing the things i used to. it's been a rough first half of 2026 but im pushing for healing, fulfilment and being inspired again,, whatever that all looks like.

i've managed to scout some cool places to eat (and drink), whilst solo, and also with the help of some people that bring me immense joy and ground me in gratitude 🫶🏼

first time ordering from @toogoodtogo.aus lol so this will be breakfast and sweet treats for the next few days 😋

was said to be valued at $30 for $10 but after calculating the costs it actually seems to be <$40 lol !!!! so yay me #ilovebread would defs order again

(very belated) december cake dump 🍰.⋆｡⋆༶⋆˙⊹

the period between finishing/ graduating uni last year and starting ft work was quite an experience and indeed very humbling, but i kept myself busy by caking 🫡...and these are only from december.....😭 hoping i can get back into caking some time soon,, after i settle into some big life changes rn 🥹✨

🌈2-4: m&ms, oreos and strawberries 💀 for an 11 yo 😅 vanilla cake, oreo swbc, oreo creme creme pat, oreos, and strawbs 🍓
🍪5-8: kinder bueno/ nutella inspired 👀 (im sorry that's the only x section i have 😭) chocolate cake, nutella and white chocolate creme pat, choc+vanilla smbc, kinder buenos 🍫
🌼9-11: summery green heart 💚 vanilla cake, vanilla smbc and lemon curd 🍋
🦢12-15: vintage style tiramisu cake 🐝 vanilla cake, espresso soak, mascarpone creme filling, cocoa and smbc 🤍
🎨16: the original sketches/bases for all four cakes, they were basically all due at the same time 💀 (before any major design elements/ mention of m&ms 💀)

thnot (pronounced like "tnout") is the fruit that comes from cambodia's national tree, and my dad explained to me how the seeds are eaten .⋆｡⋆༶⋆˙⊹ 🌴

young thnot seeds are very nostalgic for me but i've never seen how it's 'processed' from the fruit, nor have i ever encountered the sprouted version! usually it's from the can back home 😵‍💫 i've never tried sprouted coconut either but i imagine it's extremely similar 🍿

my dad is so knowledgeable about different plants and fruits in cambodia and it's been super interesting reconnecting with my roots (hah) and fun editing videos again! perhaps more to come (maybe)

*otw to siem reap, hence the lack of seatbelt and general yuckiness lol

crunchy, or *chop chop* as i grew up calling it, and slightly sweet and nutty. yummy !!!!!

i am clearly not an asmr fanatic so enjoy us trying to navigate filming in a car in preparation for elina's hopefully future asmr channel lol

recent caketivities 😼🎂.⋆｡⋆༶⋆˙⊹

they've finally made it to the grid! can you believe i've done this many cakes in the past TWO MONTHS alone 🥲 i take it as a fun side quest/ project to take on since finishing uni, and it's something i'm looking to perhaps take a bit more seriously 🤨 lmk which is your fav‼️

in no particular order of doneness:
💌 1-2: red velvet 7" heart, cream cheese smbc with fresh strawberries for angela!
🧸 3-4: chocolate (from failed red velvet) 7" heart, cookies and cream smbc and ganache to use up all my leftover ingredients xD for myself!!
✨ 5-6: vanilla 6" round, vanilla and peach creme pat and smbc with juicy peaches and fresh orchids for darany 🤩
🌼 7-8: vanilla 7" round, toasted smbc and lemon curd with fresh raspberries and chamomiles for monica 🍋
👻 9-11: costco carrot cake 4" rounds, smbc in different halloween designs!!! so much work for such tiny cakes 💀
🍗 12-13: chocolate 6" round, hazelnut creme pat, oreos and chocolate smbc for the bro ... this was actually so bangin 💥💥💥
🫶🏼 14: random 7" choc cake i decided to decorate bc i was bored xD pretty sure it was from a box, threw together all the leftover ingredients i had to bulk up the frosting

take this as a catalogue of sorts, would love to continue caking and adding to my portfolio 😼 if you'd like a cake lmk or whateva 😗‼️

A BREAK FROM THE CAKE 🥖.⋆｡⋆༶⋆˙⊹

lil g is back and revived from the dead (neglect from very busy final term of uni and winter :c) just in time for halloween 🧟‍♂️‼️💥 luckily i dehydrated some lil g in feb??, and with some flour, water and a 40°C sydney day, it was enough to resuscitate him ❤️‍🩹 (cross section also looks like a bunny :3)

i got some wholemeal flour to play with and strengthen my starter (more nutrients, prebiotic fibre etc.). my scale broke so i eyeballed 1:1:1 of starter, water and wholemeal, and i'll just keep playing around with the ratios.

the sourdough itself is 10% wholemeal and 70% hydration (excluding starter), and i could probably increase the hydration since wholemeal is a thirsty boy and absorbs a lot more water !!! but this also made the dough so much easier to work with. not a strong wholemeal flavour though 😥 might increase to 20% (w/w of total flour) next time and a higher hydration 💦

i'm erring on the side of it being underproofed, because i bulk fermented in yesterday's cold weather for 8 hours, and the bread was completed within 12 hours LOL (but for the sake of this, its PERFECT and i'm VERY pleased). and look at the oven spring and bottom crust !!! we are so back ‼️💫💥💦
