Pilpilwa is a lesser-known traditional sweet from Purvanchal, Eastern Uttar Pradesh, especially associated with home kitchens in and around Ghazipur district. Made with simple pantry ingredients, this old-style delicacy has a beautiful balance of sweetness and warmth from black pepper (kali mirch).

Pilpilwa is prepared using गेहूं का आटा (whole wheat flour/atta), घी (ghee/clarified butter), गुड़ (jaggery/gud), काली मिर्च (black pepper), ताज़ा नारियल (fresh coconut) and किशमिश (raisins). A firm wheat dough is filled with a mixture of crushed jaggery, black pepper, grated coconut and raisins, carefully sealed into small balls and slowly fried in ghee until beautifully golden and khasta (crisp). Break one open while it is still warm, and the melted gud inside makes it even more special.

In parts of Purvanchal, particularly Ghazipur, Pilpilwa has traditionally been prepared in homes around occasions such as Ram Navami. Like many regional recipes passed from one generation to another through family kitchens rather than cookbooks, it is becoming increasingly difficult to come across today.

You may hardly find a Pilpilwa recipe on ​⁠@Instagram , because very few people seem to make or document it anymore. With time, dishes like these can quietly disappear from everyday kitchens — which is exactly why I wanted to bring this traditional Purvanchali recipe to The Saffron Hours.

Celebrate Shree Krishna Janmashtami with this traditional Dhaniya Panjiri, a simple and aromatic Janmashtami bhog prasad prepared with roasted sabut dhaniya (whole coriander seeds), desi ghee (clarified butter), makhana (fox nuts / lotus seeds), dhaage wali mishri (rock sugar), badam (almonds), kaju (cashews), kishmish (raisins), pista (pistachios), elaichi (green cardamom) and kesar (saffron), finished with delicate rose petals and fresh tulsi leaves (holy basil).

In this traditional recipe, whole coriander seeds are gently roasted and then hand-ground on a sil batta (traditional Indian grinding stone). The freshly ground dhaniya is slowly roasted in desi ghee before being combined with roasted dry fruits, makhana, finely powdered mishri and aromatic cardamom. The prasad is finally garnished with pistachios, saffron and rose petals, with tulsi leaves added at the very end before offering the bhog to Shree Krishna.

Dhaniya Panjiri, also known as Dhaniya ki Panjiri, is closely associated with Krishna Janmashtami celebrations and is prepared as a traditional bhog or prasad for Lord Krishna in many homes. The fragrance of roasted coriander, ghee and cardamom makes this humble recipe especially beautiful for the festive night.

Golden, ghee-caramelised bananas served over thick, creamy Kashmiri kesar rabri — a simple yet luxurious Indian dessert made beside the coast. 🌊✨

For the rabri, full-fat doodh (milk) is slowly reduced at home until naturally rich and creamy, then infused with original kesar / Kashmiri saffron (jafran), elaichi and sugar. Unlike an instant rabdi recipe, this is slow-cooked milk rabdi, allowing the doodh to naturally develop the traditional rabri texture. Add pistachios for a delicate dry fruit rabdi finish.

Ripe Cavendish banana slices are gently caramelised in desi ghee until beautifully golden around the edges while remaining soft inside. You can use good-quality cow ghee or A2 ghee; regular ghee such as Amul ghee can also work. This recipe uses ghee rather than butter for its distinctly rich Indian flavour.

The result? Golden caramelised bananas over silky kesar rabri — creamy, fruity, warm and indulgent, with pistachio and genuine saffron strands on top.

India has an incredible variety of banana fruit, from Cavendish and Robusta banana to Elaichi banana, Nendran banana, Red banana and even unusual Blue Java bananas. While green banana is wonderful for savoury preparations and banana chips, this dessert needs a ripe, firm sweet banana that caramelises beautifully. Banana flowers aren’t used here, and unlike banana ice cream, the star is the contrast between warm caramelised fruit and creamy rabdi.
