Restaurants don't buy smokers because they're practical.

They buy them because someone wants to know what happens when time, fire, and stubbornness are applied to food.

In our case, it became smoked lamb ribs in white curry with sour tomatoes.

Worth the wait.

Lamb has always found its way onto our menu.

For a while now, we've wanted to turn it into a miang kham. A classic Thai bite built around balance—sweet, sour, salty, spicy, and aromatic flavours in a single mouthful.

This version pairs smoked lamb and tomatoes with a herb and chili jam dressing.

Here for a short time, before the next idea takes its place. Cheers!
