Each Month, we will feature a special dish representing one of these regions. Come taste the difference that geography makes. by @chatayeethai

"Bad food is made without pride, by cooks who have no pride, and no love." — Chef Anthony Bourdain. This dish is the living proof of the opposite. I used to run from chicken gizzards, livers, and hearts — until my mother's uncle placed a plate of Kia Pad Ped (ผัดเผ็ดเครื่องในไก่) in front of me. One bite and I never looked back. Today, I'm honoring our family's secret recipe. The chili paste alone is a labyrinth of herbs, dried spices, and techniques passed down through hands that cared. Every pound of the mortar, every toasted seed — done with pride. This isn't just food. It's memory, heat, and love in a wok. 🔥🍗 Save this post if you'd try offal done right. Rediscover the lost เเกงสิงหล "Gaeng Singhala" – a Thai‑Sri Lankan fusion curry that time almost forgot 🇱🇰🇹🇭 This ancient recipe dates back to the early Rattanakosin era, when Sri Lankan (Sinhalese) traders brought spices like cinnamon, cumin, and cloves to Thai shores. They melded them with local aromatics – pandan leaves and dill – plus tamarind and coconut palm sugar, creating a curry that’s savoury, tangy, and deeply aromatic. At Chatayee Thai, we’ve brought it back – slow‑braised lamb in that heritage broth, topped with our own garden‑grown edible flowers 🌸🌿 (morning glory blooms, zucchini blossoms, marigolds) for a pop of freshness and colour. Because great food isn’t just taste – it’s history on a plate. 📌 Come try this long‑lost recipe at Chatayee Thai – available now through July 26 only. --- Hashtags: #ChatayeeThai #LostRecipes #GaengSinghala #ThaiFoodHeritage #EdibleFlowers FarmToTable OldBangkokFlavours LambCurry ThaiSriLankanFusion BangkokEats --- by @chatayeethai
