It's time to post some brand new food. When visiting Italy couple weeks ago, I bought an Italian cookbook about pumpkins and this one was the first that got my attention. When you hear about liquorice, you probably imagine black candy from Scandinavia, but it can be used for much more than that. (And by the way, it's not black, ground liquorice root looks like something between ginger and cinnamon.) The puree is simple: chop and boil a pumpkin (I used kabocha squash, which is really sweet and resembles a sweet potato) and once it's soft, blend with one whole egg and the liquorice. The recipe suggested serving it with ground meat wrapped in Tuscan kale (cavolo nero) leaves. Cook the leaves for a couple minutes to soften them, then remove the thick central part and use them to wrap a mixture of ground beef, egg, some grated cheese and chopped kale leaves. Then, steam or bake them for about half an hour. As a garnish, I used an oven dried and crushed kale leaf and some old Parmigiano Reggiano. 666 kcal and 84 grams of protein #italianfood #italiancuisine #autumnrecipe #comfortfood #pumpkinrecipes by @chef.vegard
