The Fruit Art Harvest, by Head @chef.wonga 🍓🍊🍽️

While our farmers were busy stitching art and harvesting their fruits, Chef Wonga was in the kitchen working on a harvest of her own. Taking inspiration from Fruit Week at Mr. Shark’s Farm, she transformed the season’s fruits into a beautiful spread of dishes—harvested, prepared, and served her way.

Last month, on International Chefs Day, I didn’t post. I was too busy becoming.
⠀
October 20th came and went while I was deep in the kitchen, not cooking for others, but cooking myself back to life. Reimagining what it means to be a chef when your body asks you to slow down, and your spirit demands you lead with intention, not just ambition.
⠀
So here I am now, weeks later, sharing what that day seeded in me: a new chapter. A clearer vision. A table built on my own terms.
⠀
Being a chef has never been just about the food for me. It’s about the stories we carry in our hands. The memories we fold into every spice blend. The healing we serve on porcelain.
⠀
It’s about bringing Malawi to tables that have never tasted home the way I know it. Warm, rooted, and full of Ubuntu.
⠀
This journey taught me that rest isn’t failure. Adaptation isn’t weakness. And cooking with intention creates more magic than cooking with force ever could.
⠀
I’m stepping fully into this new season, as Chef Wonga, as the heart behind Kwathu Supper Club, as a storyteller who believes food can heal, connect, and transform.
⠀
Dubai gave me space to reinvent. Malawi gave me roots. And now, I’m ready to share it all with you. One supper, one story, one intentional plate at a time.
⠀
If you’ve been following quietly, thank you for witnessing this evolution. If you’re new here, welcome home. This table has a seat with your name on it.
⠀
Let’s cook, heal, and rise together. 🍽️✨

Week Three. The Harvest Table.

Respect, in its simplest form. Using the whole of what the farm gives, and wasting none of it.

Broth drawn slow around a farm egg, tallow finishing it with the richness that only comes from honouring the whole animal, boerewors dried the way biltong is dried sitting alongside. Duck rested at the table, cherries and kambuzi poured over it last, carrying its own weight.

Grateful to @ishvku Farm for the vision and the ground this residency stood on, and to @carnistore for the tallow, the broth, the duck. Produce that let the whole animal carry the story.

Four weeks. One farm. One story closing where it started.

What arrived became home.

Fruit Week, through my lens.

Some weeks I get to step outside my own kitchen and cook on a farm, in a hat I refuse to take off, figs still warm from the morning sun.

This one was made with @kwathu.dxb in mind. Not the supper club itself, but the same instinct behind it, food that asks you to lean in rather than watch from a distance. The Forest was one plate, one spoon each, because the sweetest things are rarely meant to be eaten alone.

A strawberry and kambuzi shot that starts gentle and ends with a question. A board built for hands, not forks. Grapes still on the vine because I wanted the table to remember it came from somewhere before it came to you.

Head Farm Chef this week, at Mr Sharks Farm. Kwathu’s fingerprints all over it.

Corn Week — Kwathu × Mr Shark Farm Summer School

Some ingredients don’t need reinventing, just remembering.

This week, corn. The most familiar thing in the world, and somehow still full of surprises when you actually sit with it. Where it grows. How it changes from raw to charred to ground. What it meant on the table long before it became “on trend.”

A man with a vision met a chef with an even wilder mind, and together we made it worth something more. Grateful to @ishvku for the produce, the land, and the trust to run with it.

Week 1 of the Summer School residency at Hive Dubai. Four weeks, four ingredients, one farm. We’re starting simple on purpose.

Grateful to @cometohive for the space to make this kind of magic happen. Not every kitchen lets you slow down enough to actually taste what you’re cooking.

More to come.

1 of 4: Chef Wonga x Corn

So, there is this beautiful thing happening every Sunday of July: @chef.wonga is interpreting Shark’s Farm through food.

This past Sunday, it was corn. Roasted, as soup, and as ice cream. A full career arc.

I adored the use of the entire ingredient annnnnnnd how intentional the serveware and everything else was. Nothing was there by chance, which is very much my kind of thing.

So I am here to say how amazing, amazing Wonga is, and how exciting it is to see the universe of Shark’s Farm expanding in so many directions.

In the next episode, I shall tell you all about Shark’s Farm and also brag about myself as a student in it. Let’s see how long this new personality trait of posting consistently will last 🤠🤠🤠🪄🪄🪄🫠☄️🥵

And to go back to food: I met @ishvku at Wonga’s supper club @kwathu.dxb , which remains excellent proof that food, when intentionally shared, is one of the best ways of finding your people.

We have since encountered each other in different ways, I became a big supporter of both, and I am very excited for everything that is still to come.

Also, what is Wonga going to do with weeks 2, 3 and 4? 🫣 taken in HIVE - A Living Collective by @chef.wonga
