Had the final restaurant class with my students today and finished with a tasting menu. Couldn’t be happier about how they executed on our final day together. Over the last 3 months had a chance to share some wisdom and technique and the students also had an opportunity to create the own dishes and menus with some successes and failures. All part of the learning. Wishing them the best in their next chapters. Here are the dishes
1 Oyster— Raw, smoked dehydrated & shaved frozen duck, goat yogurt, pickled chili
2 Duck Liver Paté - French Toast, rhubarb, onion jam
3 Pumpkin Seed Crusted Salmon — corn espuma, charred corn, nori powder
4 Oxtail Ravioli — oxtail jus, crispy carrots, pickled butternut squash
5 Cornish Hen — cauliflower, warm beet, mushroom & bacon salad
6 Chocolate Torte — puffed wild rice, white chocolate mousse(ish)dulce de leche

Rhubarb Koji “Cream Soda”. Where does the “cream soda” come from… well. The Koji adds a kind of creaminess into the soda that reminded me of the canned cream soda from childhood. Good carbonation. Great taste. Success. by @chef_josh_g
