🚨Secret Ingredient ⤵️

“Poor man’s oxtail,” real island style.
Turkey neck simmered low and slow until it’s falling off the bone, layered with aromatics, and finished with the same blends I use in my kitchen every day. Comfort food that hits without breaking the wallet — deep flavor, rich gravy, and pure home-cooked goodness.

Grab the exact seasonings I used — Patois, and SugarCane — over at @offthepepper or www.offthepepper.com.
Your pot will never taste the same again.

Pro Tip: Stop steaming your Brussels into mush — sear them like a chef.

Here’s the move that changes everything:
Get your pan ripping hot. Not warm… not “almost there.”
HOT — the kind of hot where the oil barely whispers before it smokes.
That’s when Brussels go from bitter veggie to caramelized, crispy gold.

The Technique:
• Dry the Brussels — moisture kills your crust
• Use a high-heat oil like canola or Pure olive oil (not EVOO) . I used brown butter for the flavor.
• Let them sit, untouched, until you get that deep brown sear
• THEN flip and season (Reggae Heat hits perfectly here)

🔥 Ultimate 2-Cheddar Grilled Cheese 🔥
Golden crust. Melted cheddar lava. A touch of truffle to make it chef-worthy.

Recipe:
🥖 2 slices sourdough bread
🧈 2 tbsp butter
🧂 pinch of truffle salt
🧀 2 slices aged cheddar
🧀 ¼ cup shredded sharp cheddar

Directions:
1️⃣ Heat your pan on medium-low.
2️⃣ Add butter and a pinch of truffle salt directly to the pan — let it melt and sizzle to infuse that truffle aroma.
3️⃣ Swirl the pan so every inch gets coated, then lay in one slice of sourdough.
4️⃣ Stack both cheddars, then top with the second slice of bread.
5️⃣ Cook until golden, flip once, and press lightly for that perfect melt.
6️⃣ Rest 30 seconds before cutting — it locks in the gooey center.

✨ Pro Tip: Don’t rush the flip. Let the butter do the work.

🧠 What’s your grilled cheese upgrade? Should I try caramelized onions next or go spicy with Reggae Heat? Comment below ⬇️ #cookingtips by @chef_jtownsend

🔥 Pro Tip:
Before you drop that burger or steak in the pan — make sure your oil is hot enough to smoke.

That light smoke means the pan is at the perfect searing temperature to lock in juices and build that golden crust chefs chase. If you add your meat too soon, it’ll steam instead of sear — and you’ll lose that flavor you worked for.

Let the heat do the work. 🔥

Ever tasted sunshine in a skillet? That’s Jamaican Callaloo — bold, vibrant, and straight from the soul. Callaloo isn’t just greens — it’s heritage on a plate.
Every bite is a reminder that simple ingredients, when seasoned with purpose, can taste extraordinary.

Here’s how I bring it to life:

🌿 Ingredients:
	•	1 bundle of fresh Callaloo, cleaned and chopped
	•	½ red onion, diced
	•	2 stalks scallion, chopped
	•	3–4 mini sweet peppers, diced
	•	2 tsp fresh minced garlic (minced yourself for the freshest flavor)
	•	1 tbsp Patois All-Purpose Seasoning
	•	Reggae Heat to taste — depending on your tolerance for that Scotch Bonnet kick
	•	2 tbsp olive oil
	•	Vinegar and salt (for washing greens)

🥬 Method:
	1.	Wash your Callaloo with water, vinegar, and salt to remove grit and bring out that clean, earthy freshness.
	2.	Heat olive oil in a sauté pan over medium heat.
	3.	Add your red onion, sweet pepper, and scallion, and sauté until fragrant and softened.
	4.	Stir in minced garlic and let it bloom for 30 seconds — that aroma sets the stage.
	5.	Add your Callaloo, then season with Patois and Reggae Heat.
	6.	Cover and let it steam until the stalks are tender and vibrant green.

The result? A dish that tastes like home — no matter where you are.

Bring authentic island flavor to your table with the same blends I use.
Shop Patois and Reggae Heat now at OffThePepper.com 🌴
Because your greens deserve more than salt and pepper — they deserve culture.

This isn’t your average pork chop — it’s flavor with purpose.

Marinated in Patois + Reggae Heat, roasted with SugarCane blend, and finished to Michelin perfection.
