INGREDIENTS:

250g Fresh Basil (or spinach)
250g Boneless Chicken thigh
2 Garlic cloves
2 tbsp extra virgin olive oil
100g toasted mixed nuts (optional)
Penne (80g per person) + pasta water
Chilli flake
Salt
Parmesan cheese
Pepper

METHOD

1. Season your boneless chicken thigh with salt and pepper then Marinate it with our homemade marination,
2. Pan seared the Boneless Chicken Thigh and Bake at 375°F (190°C): 15-25 minutes
3. Separate the basil leaves from the stalks,
4. Place in a food processor/blender, then grate in the garlic, add the olive oil + blend to combine.
5. Scrape down the sides, then add the nuts if using, Blend, seasoning to taste with salt + pepper.
6. Get your pasta onto boil in salted water. Once al dente, strain, reserving the starchy water,
7. Add a ladle of pasta water to the sauce to loosen, then pour the sauce into the pasta, stirring to combine. Add more pasta water as required.
8. Spoon into bowls, diced your boneless chicken thigh on top, with parmesan cheese, garnish with fresh basil, and anything else you fancy - enjoy 😋😋😋
