When life gives you tropical storms forcing you to close @gorillapies on a Sunday, get back to your roots and experiment at home. Here, I took 8 day old pizza dough (300g) (65% hydration) and cooked it off in a preheated @lodgecastiron combo cooker @500 degrees for about 20 min. Baked with cover for 20 min, then finished uncovered for 10 min. Looks like pizza bagels might be coming to @gorillapies before you know it. STAY TUNED taken in Encino by @chef_osh
