Coffee Cake | Raspberry | Chocolate Ganache | Buttermilk Sherbet

#dessert due to popular demand and the fact that chocolate & flowers fixes everything ❣️

Sometimes I just love the simple and pretty and uncomplicated things - that was July 23rd 😌 today I’m complicated 😂

Tomatoes Salad & Sorbet, Peas, Bachelors buttons

Facts:

* Tomatoes are not Italian, revisionist history is a thing

* When tomatoes were introduced to Europe, they were received to be poisonous; puter plates + acid from tomato = led poisoning * bad scientific process + lack of knowledge = tomatoes labelled as the cause for the decease of the rich (poor ppl ate of wood plates), hence tomatoes becoming poor people food!

* @herecomespennie nail polish is most days on point, but not always matches the plate - Send complaints to head office 🥺

* Food is politics (even Erica's nails are 🤷‍♀️)

If you're triggered by my posts left-leaning content, or just happen to randomly find Waldo, send your formal complaints to head office 🤗🤫🏳️‍🌈

Vegetarian dinner is a challenge for desserts. You're thinking... Most desserts don't have beef or pork in them, duh! but after 5 courses of vegetables and cheese, bringing in a new vegetable or fruit to the mix becomes harder.

Caramelized banana, candied beet, filo, pistachio

This was my dessert for that dinner, I live vegetarian dinner, I'm mostly vegetarian in my personal life (ideology on multiple levels) and the challenge is always, extra, fun 🎢

Scallop 2 Ways (çeviche & seared) | Black Rice | Cucumber | Tapenade Macaron

I have many creative processes:
* I know exactly what I’m doing I have a vision.
* Picture in my mind transforms into a dish slowly.
* Inspiration from great chefs or pics I saw here on Instagram.
* The weird: random ingredients that pop into my mind and I have this slight idea in my mind what it will be but it mostly comes to life as I make it…

Welcome to the result of the weird - all I had is directions from the client that they want scallops on the menu. Paired with some random ingredients that sounded good in the sentence and 0 idea what then end result would be… voilas ❤️

Exploring and believing in your skill is one of the most important things in art. Failure is never an option - all you can do is reveal a cool yet incomplete idea. Lucky me, this one was pretty great 😊

At times a client asks me to revisit a dish I already did. After I settle down from my tantrum I actually get to enjoy it 🙆🏻‍♀️

Summer berries / poached pear / crème brûlée / praline macaron

Remembering that the plating is the same, the flavours are the same, but there’s this influence of new ppl that makes everything so different 🥰

Steak | Roasted potato | Truffle Manchego

I met one of the loveliest humans in that dinner. I feed of the consultation vibes before I get to my clients home - sometimes I’m completely off base and most times I surprised by how much more amazing they are in person.

I wrote the menu in the market - over coffee after looking at all the plenty and fresh produce. These are my favourite moments in life - getting creative carte blanche and riding on inspiration, revisions on the spot, et voilas!

Plated on @handbuiltpittsceramics translucent plate it was a magical course ❤️

Everything is political! When you’re privileged enough and on the side that benefits from oppression you can pretend it’s not. If you’re not that, and still choose to ‘good vibez only’, politics will come and kick your butt one day 🍽

Tomato | Carrot | Blackberry

A simple salad that addresses the 3 key issues I call my life.

* Thing that don’t belong with things cause someone decided so and we follow these rules blindly.

* Who made orange carrots the picture perfect essence of carrot existence? Who died and crowned some of the same in humans? (No one introduces folx as white or cis it’s only the trans, poc, etc that are excluded).

* Tomatoes are not Italian, they actually have long essays about them being toxic from the 1500’s and they were for ages classified as poor ppl diet in Europe - decisions of history are too common in 2021.

Food is politics, existence is politics… welcome to the revolution! Knowledge > truth > reconciliation is the only path to justice ❤️

Anniversary dinner for 2 amazing people I recently met, course 3:

Scallop çeviche | watermelon | passion fruit | caviar & salmon roe

A story must have different peaks in order to exist. Flat line stories must be very short. So in a meal packed with politics, anecdotes, twists & turns - one must preserve a few spots for the ‘just pretty’. I could point out that the watermelon is a distant cousin of the cucumber and centre my essay around it coming from Africa originally, keep the conversation around movement of products with the ages and colonialists, I could talk about cloning and seedless watermelons and our world burning as a result of our behaviour as a specie, but every meal needs a quiet point - and this was it.

A beautiful plate from @bernardaud , wines from @winestyleto , @herecomespennie table, simple clean flavours, minimal intervention on my end, and just joy.

There’s something about new adventures. There’s another beauty in studies…

This is a flavour combination I keep coming back to - it’s been in play for a long time - maybe it’s one of my signatures?

From shrimp to frog leg, tuna only, salmon only, and crosses between - with different fruit as seasons allow, rigid is my study.

I’m not sure when will I be ready to put it to rest, watch the last real and @winestyleto last post to see how it’s made from 0 in a clients home 🧡

I missed cooking beyond any possible word. Thanks for summoning me once again 🧞‍♀️

An example of one of my creations that takes flawless teamwork to execute in a timely manner for groups of humans 👯‍♀️💥

◻️wild shrimp 🍤
◻️salmon two ways
▫️seared and tataki
◻️ beets 💜❤️
◻️ kiwi 🥝
◻️ cilantro macerated cherry 🍒🌿
◻️ caramelized banana 🍌

Have you ever tried flavour combinations like this before?

Are you an adventurous eater when it comes to eating food made by a trained chef? 💭👀🍽

An anniversary dinner in conjunction with the day we celebrate our day of revisionist history (aka canada day) prompted a few dishes with some land centric politics.

Tomato consommé with Sockeye salmon intermezzo

The red tomato turned translucent that day 🍅

I’m so grateful for cooking again, for my beautiful clients being mostly politically good, I’m still waiting for that one right wing fanatic to ask me to shut up at a dinner 🙆🏻‍♀️

Back to the kitchen after 7 Ish months of time out.
I missed my outlet of self-expression. I missed communicating the issues I care for with others. All the new developments that made politics even more important than ever are burning in my soul.

Carrot cumin macaron | smoked trout rillette

I'm in my happy place again. Even though these are painful issues to surface the privilege of communicating them is giving me a high... The existence of an artist is complicated I suppose.

To new a-ha moments, to more of them “i didn't know if I could like this vombination”, to change minds, to opening ppl to new ideas, flavours, existences, ideas... Who knows maybe we will live in a better society sooner than I think?

I love my work and my clients
