Growing up, soy sauce was my point of refrence point for fish. Still is. Adding a sweet and sour pickled kumquat could be viewed as sacrificial. If I didn’t try it I wouldn’t know. Stepping outside our boundaries and seeing if things work or pair well makes all the difference. #cuisine #bluefintuna #privatechef #chef #cook by @chefbronsonmacomber

Liver can be an acquired taste for most of us. But when prepared correctly it can be one of my favorite delicacies to enjoy before any meal. Chef Chris Barnett (Stars Restaurant SF) taught me how to prepare this years ago in Venice Beach, CA.

We created the original version of this dish @elderberryhouse @cheechdkm7 @sf_street_eats @iwaskiewicz . We debated if we needed herb oil or not and at the end we decided not to add it.
Sometimes the simplicity in each dish is the discipline to hold back to let each ingredient shine on the plate.
