Introducing Chef’s Story, a closer look at the people shaping San Diego’s food scene.

In our first episode, Chef Brad Wise ( @chefbwise ) shares how he discovered his love for live-fire cooking and built @trustrestaurantsd into one of the city’s most recognizable restaurant groups.

Chef Brad has elevated the city’s dining scene, while creating restaurants that feel distinctly “San Diego”

This is TRUST.

@alouestsd opened in February at the northeast corner of North Park’s busiest intersection, 30th Street at University Avenue. It’s been a smash since day one.

À L’ouest is a French phrase meaning “to the west,” which Chef Brad Wise said represents his journey to California 20 years ago from his native Cape May, N.J. The food at À L’ouest also represents the journey he has made as a chef and restaurateur.

This week on Happy Half Hour, Brad Wise—our 2024 Chef of the Year—looks back at his last (wildly prolific) 10 years. He’s opened Trust. Fort Oak. Rare Society. Cardellino. The Wise Ox. And his brand-new smokepoint-French brasserie, À L’ouest.

@chefbwise sits down with host @heytroyjohnson to talk restaurant wins, business-owner terrors, a decade of woodsmoke in nice places. And, in honor of Brad being a Jersey deli kid, the duo name their favorite sandwiches from across San Diego.

When Wise and team first opened Trust around the corner from the main drag in Hillcrest, there wasn’t anything like it. Now, it feels like every top restaurant has a pile of wood next to the kitchen. But back then, Trust was alone on that fire island. And it nearly didn’t make it.

“We were scraping by, praying that we were going to have a busy weekend to make rent and—not only that, but payroll,” he recalls. Thank god his food was good and his wife had a job.

Word eventually gets around. Troy named Trust his “Best New Restaurant” that year, because it was a perfect mix of cavepeople food and hoity-toity food. Eight years later, Troy named Brad chef of the year because he’d dotted the map with some pretty great concepts.

He’s our guest in the studio this week. Listen or watch with the link in our bio. (You can also visit sdmag.com/hhh, or just search Happy Half Hour wherever you get your podcasts.) taken in San Diego, California by @chefbwise

Some reservations are hard to get… and then there’s A’Louest @alouestsd one of the most requested reservations in San Diego right now.

This exquisite restaurant from my friend Brad Wise… I mean, at this point he’s just showing off. The guy has three of my top five restaurants in San Diego and it’s honestly kind of annoying because I can’t eat there every night, even though I 1000% wish I could afford to!

It’s French, but approachable, fun, and absolutely, disgustingly, delicious. I’m not kidding… everything we ordered was exquisite and then some.

My friends Osiris and Bettina took me out to celebrate my birthday a couple of weeks early since I’ll be traveling and our schedules are always a little wild. Three boss women trying to coordinate is no joke. 🥴

I brought one of my favorite bottles from LXV Wine @lxvwine because Neeta Mittal @themistressofspice is always so inspired by the French way of making wines that are meant to be on the table with food. And that Sauvignon Blanc–Sémillon with the mussels… out of this world.

From the perfect baguette to the excellent service, I can’t say enough about how excited I am to go back.

And it just happens to be right in the heart of North Park on 30th and University, steps away from great cocktail and vinyl bars. This is the perfect date night.

Also… I’m open to dinner if anyone wants to treat me to another birthday dinner 🤣 by @chefbwise

✨🇫🇷 First Looks – North Park’s Modern French Brasserie Opens on 30th Street 🍷🔥

Bonjour, North Park.
TRUST Restaurant Group has officially opened @alouestsd, a modern French brasserie anchoring the corner of 30th & University. The group’s 13th restaurant—and most ambitious to date—this 5,000-square-foot space brings the soul of a Parisian brasserie into one of San Diego’s most food-forward neighborhoods.

At the helm is @chefbwise, reinterpreting classic French cooking through TRUST’s signature live-fire approach. The result is food that feels deeply familiar yet quietly bold—rooted in technique, exceptional sourcing, and layered flavor. French cuisine with confidence: rich but restrained.

🍽️ My Recommendations
• Steak Frites – NY Strip
12oz prime New York steak finished with sauce au poivre, served with crisp frites and a peppery watercress salad.

• Dover Sole Meunière
Simply prepared with brown butter, capers, and lemon—letting pristine fish and classic technique shine.

• Raviole du Dauphiné
Delicate ravioles with sunchoke, beurre fondue, and Comté—comforting and quietly elegant.

• Tuna Crudo
Lemon confit, pickled peppers, sauce verte, pistachio crunch, and scallions—bright, layered, and refined.

• Chicken Liver Parfait
Silky and luxurious with persimmon, fennel aigre-doux, and chives.

• Aged Duck à l’Orange
Confit croquette, chicories, kumquat, and sauce bigarade—classic French flavors with depth

🍸 Cocktail Program
The largest TRUST has launched to date, led by Beverage Director @variationofaclassic alongside Bar Lead Chris Dunsmoor. French spirits and early 20th-century technique meet a distinctly California sensibility.

Cocktails to know:
• Silent World — vodka, algae brine, spirulina
• Cherie Baby — calvados, Granny Smith apple, lemon, manzanilla sherry
• Outlander — vodka, orange aperitif, aloe vera, champagne yeast

With a French-forward yet approachable wine list and a thoughtfully designed dining room, @alouestsd already feels like a North Park institution in the making.

📍 Open Wednesday–Sunday starting at 5pm
🍷 Apero Hour & Brunch coming soon

Your first look at one of the most anticipated restaurants in recent memory: À L’ouest.

“The true French folks will probably be rolling over in their grave, if they’ve seen what things we did,” admits Trust Restaurant Group founder Brad Wise. (@chefbwise) His mild affront to francophile purists is À L’ouest, a brasserie-meets-steakhouse arriving in North Park on Wednesday, February 11. @alouestsd

Inside the elegant, Art Nouveau space, Wise will serve his take on French classics: The French onion soup comes loaded with “massive chunks of oxtail,” he says. Instead of moules frites, À L’ouest cold-smokes mussels with sesame chili crunch and vadouvan, an aromatic French-Indian curry.

Despite the twists, Wise promises that À L’ouest isn’t THAT out there. “You’re going to know it’s a French place,” he says. “It’s just a French place done by us.”

2 years in the making. @alouestsd is officially opening Wednesday 2.11. Might have been the longest project I’ve ever worked on - but it’s worth it. Thanks to the team for coming along for the ride. 13th opening, couldn’t do it without these people. by @chefbwise

Full transparency: I was comp’d this meal as part of the grand opening, but NOT paid OR contracted to post this. My thoughts are 100% my own. These videos are a labor of love created at my own financial expense - I essentially donate my video production skills and social media platform to my Vegas following to help local restaurants thrive. I wouldn’t spend my time and effort on any restaurant, business, attraction, or show I didn’t genuinely believe in and enjoy. Creating quality content takes time and effort, but it’s worth it to showcase amazing local businesses. If you want to see Vegas restaurants succeed, support creators who highlight them. To the critics - show me what YOU’RE doing to support local Vegas businesses. ✨ taken in Las Vegas, Nevada by @chefbwise
