Way back in 2015, I was lucky enough to be a part of a team that hosted @chulegre at The Asbury for part of a guest chef series. Chef Smith and his sister came down to Charlotte from the famed Crook’s Corner and he made a dozen of “that damn pie.”
Fast forward 10+ years, and @zackontheattack sent me a @nytcooking post about the Atlantic Beach Pie, and since we are at Emerald Isle, and so close to Atlantic Beach, I figured it was about high time I tried making it myself.

A trip to the @oakisland_town farmers market yielded tomatoes, garlic, a few teeny bell peppers, and some magnificent early season okra, started in a hoop house and moved outdoors a month ago. Thin walls, tender seeds, and the right amount of snap made them perfect on the grill, smothered in a bit of @dukes_mayonnaise, lemon juice, and everything seasoning. by @chefccoleman

Got to attend the Carolina Luau dinner at @goodyearhouse with @guardandgracecharlotte ⁠, where @chefccoleman teamed up with @cheftroyguard and Adam Vero adamvero for a relaxed, family-style four-course meal celebrating Carolina roots and Chef Troy Guard’s Hawaiian upbringing.

The menu featured lomi lomi salmon with fresh summer tomatoes, deep dish pizza with creole shrimp and Carolina pork, oak-grilled Guard & Grace prime striploin, Huli Huli chicken, mushroom skewers, lettuce wraps, and plenty of other delicious bites plus cocktails crafted by Guard & Grace’s mixologist. 🙌

Such a beautiful and thoughtfully done event all around. I’d definitely recommend checking out an event at The Goodyear House! taken in Charlotte, North Carolina by @chefccoleman

A Carolina Luau we’ll never forget! 🍹🌺

We recently joined our friends at @goodyearhouse for a special backyard-style dinner, where @cheftroyguard, @chefccoleman, and @adamfvero came together to create a family-style menu inspired by Carolina roots and Chef Troy’s Hawaiian upbringing.
