šŸ¤” food for thought:

American fine dining doesn’t have to follow the same playbook as the rest of the world. It shouldn’t. Our culinary history wasn’t shaped by aristocracy—it was built by immigration, adaptation, and survival.

Years spent navigating a fine dining landscape that often felt detached from my own story have shaped my conviction: we have the power to redefine what ā€˜fine dining’ means in America. It should be rooted in labor: the farmers, fishers, and purveyors whose work tells the story of the land. It should reflect seasonality, regionality, and the people who bring food to the table.

Take, for example, this ā€œSmoked Whitefish Under a Fur Coatā€ šŸŸšŸ„”šŸ„•šŸ§…ā„ļøā„ļø
*best enjoyed w/ friends and buttered crackers

A dish born from tradition and necessity, reimagined with Midwestern intent. Russian origins meet Great Lakes bounty, with a deep respect for winter preservation and the labor behind every ingredient.

At its core? My mother’s potato salad lol! Plus the addition of sweet winter carrots, creĢ€me fraiĢ‚che, dill, hard-boiled eggs, and smoked whitefish from the Great Lakes, brightened with lemon zest and hot sauce.

Beet giardiniera—fermented beets, capers, charred and braised beets, anchovies, fish sauce, and chilies—brings acid, salinity, and depth. Finished with thickened buttermilk, dill, trout roe (whitefish’s cousin btw),caviar. This is what American fine dining means to me!

I am not a talented chef.

I’ve easily made more bad food then good lol (ā˜šŸæšŸ˜‚ )

Just to be clear making good food doesn’t require formal training, endless funds or the most sought after ingredients. Good food isn’t pretentious or unapproachable. It’s universal I think. Have a willingness to explore flavor.

Commit yourself to your craft! Nurture it, develop it, and create! Commune with other like minded people as well. Good food isn’t made vacuum.Be open to criticism but try not to take it too personally (you will) šŸ˜‚ šŸ˜‚ šŸ˜‚ A lot of ā€œluckā€ and opportunity is born from sweat equity. Keep your head down and work, bust your ass, but know your worth! Set your price now….on what you’re willing to sacrifice to reach your goals! I would love to say that if you do these things you’ll make it…but there’s very little guarantees except long hours and late nights lol. But don’t despair because you’re in good company! Bourdain wrote it best,

ā€œIn America, the professional kitchen is the last refuge of the misfit. It's a place for people with bad pasts to find a new family." by @chefchristianhunter

MEET HOOLIGAN 2.0.

This fall, James Beard Award finalist and 2023 MICHELIN Young Chef Award winner Christian Hunter (@chefchristianhunter) opens the doors to @hooligan.chicago, his first solo restaurant, in Logan Square.

Hooligan is the clearest expression of Christian’s cooking yet. He calls it ā€œThird Coast Contemporary,ā€ a neo-Midwestern bistro with the ingredients and foodways of the Great Lakes running through the menu, grounded in the classic French technique that’s shaped his career.

Here, Great Lakes perch is served with gribiche, while pike quenelle finds its way into petite ravioli with Nantua sauce. Hot water cornbread comes with pimento cheese and chicken liver parfait. For Hooligan’s signature caviar service, Christian is sourcing paddlefish caviar from a producer near the Kentucky-Ohio border, served up with a crispy potato and house-made dip.

ā€œIt’s Midwestern as hell, and it’s a perfect example of who we are.ā€

After opening and leading Atelier to a MICHELIN star within nine months, Christian is moving away from the tasting-menu format for Hooligan. The restaurant will be almost entirely aĢ€ la carte, bringing the precision of his fine-dining background into a neighborhood restaurant designed to feel…well, fun! Thank you to @haut_in_here and @wttwchicago for your help with a proper re-introduction. (Link in bio)

H2 couldn’t be prouder to work with Chef Christian and the Hooligan team as this special restaurant prepares to open doors in our favorite neighborhood.

Hooligan debuts this fall at 2528 N. California Avenue in Logan Square. Follow @hooligan.chicago for more updates.

My whole life I’ve been captivated by the power of cinematic lighting—how it can shape a story, set a mood, stir emotion. Just as deeply, I’ve been endlessly fascinated by food in all its forms, flavors, and cultural expressions. Both have always spoken to something instinctive in me—something soulful.

So I thought, why not bring them together?

We’re used to seeing stunning images of food—gleaming dishes under perfect light, pristine kitchens full of motion and elegance. But what about the chef? What about the heart and intensity that go into every slice, every recipe, every flavor? They polish the plate until it gleams, but sometimes we miss the true fire in the person behind it.

I want to turn the lens toward that passion. I want to light chefs the way we light stars—because they are. The art is breathtaking, but the artist is the heartbeat. And I believe that deserves to be seen, felt, and celebrated.

This first session was with the incredible Chef Christian Hunter in Chicago—a true force in the culinary world. He’s not only a recipient of the prestigious Michelin Young Chef Award but also a James Beard finalist for Best Chef in the Northeast, recognized for his inspiring work at Community Table in Litchfield, Connecticut, and also the Opening Executive Chef of Atelier in Chicago.

But beyond the accolades, what struck me most was the presence he brings to his craft—the focus, the fire, the quiet intensity behind every movement. Being in the room with him felt like witnessing art in motion. It was the perfect beginning to this journey: capturing not just what chefs create, but who they are in the moment of creation. Thank you, Christian, for your time and your wisdom.
