Epic run in LA with @chefclaudiasandoval @naturallyzuzu and @pappa_frites for @chefpyet’s wedding. Solid crew, zero fluff, just getting it done. @melissasproduce brought in some of the best squash blossoms I’ve ever seen—absolute stunners.

Great food isn’t magic, it’s work. Especially onsite, calling audibles in real time and riding the edge a bit. That’s the game, and honestly…that’s the fun of it.

A most excellent time yesterday preparing brunch at @orangehomegrown - great folks and a great cause. Equally amazing ingredients as well from both the market and farm.

The salad was a surprise hit but those leafy greens onsite after an AM spring shower were epic, transcendent actually. Add Tajin candied walnuts, prime blackberries and some Honduran crumbling cheese - that was a recipe for a fresh bite. The Greek Frittata via @chefjoanneweir was a crowd pleaser as always and also the largest one I had ever built, bet I’ve made 200 of them over the years.

Kids and volunteers were super rad, played a ton of rare 60’s dancehall too. 

And now? Sonoma County for three months of cooking and travel starting this Thursday, it’s gonna be quite a Spring 😊😊😊

Saturday at The Ecology Center in San Juan Capistrano with @pappa_frites was pretty magic with lots of talented Chefs on hand. It was for an epic cause too.

Cooking near the coast à la Alta California — peppers, fire, history and some Californio feels.

Perfect……

North to South, this state feeds my heart and soul.

Six years ago today……

That Labor Day weekend started out wonderfully. Plenty of folks in camp, and the vibes were perfect. Then what began as a puff of smoke in the distance turned into a life-changing situation.

The Creek Fire was in full effect, tearing up through Huntington Lake and cutting us off in the backcountry. We eventually made it down to Shaver Lake, where we were corralled by the CHP into the parking lot at Sierra Summit ski area.

They started lining us up, taking names and dates of birth “just in case something happened,” which wasn’t exactly reassuring. For more than a moment, we thought they were going to chopper us out.

I will NEVER forget the sound of those blades chewing through the acrid air above us as the helicopters made slow passes, trying to find their way through the smoke. Those pilots were f’ing heroes.

At the last moment, CHP came into the parking lot and told us we had two minutes to pack our stuff and get on the road. The fire had jumped Highway 168, but it was just clear enough for us to drive through under escort.

That was quite a day……

And the Creek Fire story was just getting started.

Third-generation owner Hillary Hurley tells the tale (during a bumpy ride into camp) of her grandfather, Karl Smith, first seeing the place on a backpacking trip with Peckinpah, a Fresno native and eventual director, and how their family ultimately acquired the place.

Quite a saga…

Last week I had the pleasure of cooking at Château Montelena, one of California’s most iconic wineries. Long before the 1976 Judgment of Paris, this place was already making history in Napa Valley. “Legacy shop” doesn’t even begin to describe the character there.

On the menu was some High Sierra tri-tip, Oysters Huntington (fresh from Bodega Bay), a nice Caesar, great wine, and even better guests. That’s quite a combo plate.

Grateful for the opportunity to cook in such a legendary setting. This job never gets old, and neither does the bounty that is California. 🙂

Very special thanks to the crew there, and a big shout-out to Elizabeth for jumping in with the assist.
