Today, we didn’t just cut a ribbon. We opened the doors to a dream. 🖤💛 Since 6:00 A.M., people were already waiting to celebrate our Grand Opening with us. Seeing you there, feeling your love, and experiencing so many emotions together is something Guillermo and I will never forget. This moment started long before today. It started with a goal we had clearly set from day one—with hard work, sacrifices, long nights, countless tests, mistakes, and the decision to keep believing. And when we finally cut that ribbon, it felt like we weren’t simply opening a store… we were opening the doors to our future. But Empire Cookies is not just Guillermo and Eduardo. Behind every cookie is a family—a team that works, bakes, cleans, prepares, serves, and gives their very best so that every person who walks through our doors can experience something special. We can create a product with all our heart, but without you, none of this would have meaning. You are the ones who bring Empire Cookies to life. Houston, thank you for welcoming us. Thank you to everyone who arrived early, to our friends, our family, our incredible team, and every single person who chose to share this unforgettable day with us. This place was created for you. De un sueño a @the_empirecookies En ese nuevo comienzo apareció la persona que cambiaría mi historia para siempre: mi compañero de vida y socio, Guillermo. Hace cuatro años comenzamos este sueño juntos. Todo tomó un rumbo definitivo después de un viaje a Nueva York, donde conocimos una reconocida marca de galletas que nos inspiró a creer que un producto sencillo podía convertirse en una experiencia inolvidable. Al regresar a Houston nos hicimos una promesa: Houston merece algo diferente. Comenzaron meses de pruebas, recetas, errores y cientos de intentos hasta crear algo que realmente sintiéramos nuestro. Durante cuatro años recorrimos farmers markets, festivales y grandes eventos por todo Texas. Cada galleta vendida nos acercó un poco más al sueño. Hace muy poco abrimos las puertas de nuestro primer hogar: Empire Cookies. Pero Empire Cookies nunca fue solo una tienda de galletas. Siempre soñamos con crear un lugar donde las personas pudieran compartir, disfrutar y sentirse como en casa. Hoy ofrecemos galletas artesanales, bakery, helados, cinnamon rolls, café y muchas ideas que siguen naciendo de nuestra pasión. Muchos me preguntan por qué nuestro logo es un gorila. La respuesta está en nuestro nombre: Empire. Inspirados en la fortaleza que representa King Kong sobre el Empire State Building, transformamos esa imagen en un símbolo de perseverancia, valentía y la capacidad de levantarse una y otra vez. Cada vez que veo nuestro logo en la fachada recuerdo la promesa que me hice al llegar a Texas. Hoy sé que los sueños sí se cumplen. No por suerte, sino por fe, disciplina, sacrificio, familia y por las personas que creen en ti incluso antes de que el mundo lo haga. Gracias, Venezuela, por enseñarme quién soy. Gracias, Texas, por abrirme las puertas. Y gracias a todos los que forman parte de esta historia. Esto apenas comienza. by @chefeduar
