The name is @theonelav. Tim Lavender. And the mission was 0072🍸

For a man who loves James Bond, his wife, Lisa Lavender, planned quite the plot twist: a surprise birthday celebration that left him completely surprised and surrounded by the people who love him. At 72, Tim has quite a beautiful cast beside him, beginning with the woman who brought us all together for that evening.

His gorgeous blended family, friendships with years and depth behind them, and so much affection in one room. Watching him take it all in was one of my favorite parts of the night. You could see how much he means to everyone, and how much everyone means to him.

Tim has such a delicious way of enjoying life. Good company, beautiful food, a little art, a good story, and time to appreciate it all. He pours so much love into those simple pleasures that being around him makes you want to linger a little longer. Another conversation. Another laugh. Another reason to stay at the table.

And where better to bring all of that together than Meridian? Chef Eduardo and the tremendously gracious team gave us the food and hospitality we love, with such care for the occasion. All our favorite things in one evening. A chef’s kiss, a friendship kiss, a little Lavender kiss to our lives!

Tim, seeing your family and friends gathered around you, each with their own stories and reasons to love you, made the evening all the sweeter. It is a beautiful thing to see someone you love surrounded by the relationships he has helped make so meaningful and rich. You give us so much to celebrate, simply by being you.

And today, it’s officially 0072. 🍸 Happy birthday, our dear Tim Lavender. What a privilege to have a place in your story and your life.

Half price one hitters and a blue cheese washed martini? Meridian now has my heart 🤍

Chef Eduardo Osorio is an LA native who moved to Dallas in 2024, and he’s been doing it right, cooking live-fire food at Meridian since he arrived 🔥 He’s also behind the Chef Collective dinner series, teaming up with guest chefs like AQ Pittman, RJ Yoakum, and Travis Wyatt. Dallas chefs are lining up to cook with him for a reason!! ✨

Happy hour runs until 7PM, which is RARE, and the one hitters are half price. Of course I ordered them ALL. My favorite was the chilled clam 🦪

You have to get:
🍸 Meridian Martini — if you love blue cheese, you will diiiie 💀 at how good this is
🦪 Chilled clam & shrimp toast
🍝 Lamb bolognese lumache
🍨 Smores AND honey burnt tart… you’re getting both

Pastry chef Brenda Perez is a WIZARD!! 🪄

They also have Wednesday through Friday a GIRL DINNER in the main dining room: a martini, truffle fries, and your choice of two one hitters for $25. I’m already planning my return for that, plus the $17 happy hour burger because it looked INSANE 🍔

This is the exact vibe I look for ✨ Elevated but so comfortable. Business meetings at one table, DJs working on a set for the next night at the bar next to us, and everyone dressed totally differently. A great crowd.
