Honey sponge cake, citrus compote, caramel ganache, encased in a milk chocolate mousse and covered with a shiny red mirror glaze, topped with a spun sugar decor and crushed meringue, sitting on a hazelnut sable.

This was the dessert I made for my final exam🤭

I don't think you know, but pastry is my speciality.
