Six and a half years ago I went for an interview in Hackney Wick. An hour earlier than scheduled I found myself getting a coffee at Pearl opposite a building site soon to become Cornerstone by Chef Tom Brown.

Embarrassingly my eagerness was rumbled as I realised Tom was having a coffee with his operations manager Francesca next to me. The awkwardness of being so keen and very early and them being sat right there was so palpable I was forced to interrupt them and introduce myself.
After the initial confusion as to why this Midlander had approached them, Tom with his good looks, charm and charisma made our interview easy. He proceeded to explain and showed me the plans for his unique vision for Cornerstone and instantly I wanted a piece of the action.
He offered me a trial shift which was in fact the opening two nights of the restaurant.
The trial went great however there wasn’t a suitable position for me.

Fast forward a year later and the position for Sous Chef was available. From then on my journey began with Tom and Cornerstone with a fews lows and so many amazing highs. From starting out as a Sous Chef to Head Chef and now leaving as a Michelin starred Executive Chef.

I can’t thank Tom enough for the trust and ownership he has given in the past 5 years with such an incredible restaurant, produce and with some of the most talented chefs and people I have ever worked with.
Couldn’t have done any of it without you all!
So many long hours, blood sweat and tears have gone into creating Cornerstone with him and I can truly say I am so proud of what we have achieved ‘togedder’.
