“He is a wise man who does not grieve for the things which he has not, but rejoices for those which he has.” by @chefjosemaria

Everything starts with a burning fire and plenty of raw ingredients. Every day brings a new life to the hot and loud kitchen environment. The work is long and hard. Each service is a different challenge for someone who wants to learn more, and go beyond the basics. What it is important is discover how flavors fit together.

Sweetness arrives like a soft sunrise, while the bitterness holds the wisdom of the earth.

Mastering food takes years of quiet focus and dedication. Uncountable sauces to taste over and over. But even with that tireless search of perfection, still also important to commit mistakes, as they teach us valuable lessons, and in the end, patience and techniques turns simple ingredients into a memorable dishes, despite in our reality, there is always a lot more to learn.

True skill does not shows only when the kitchen gets very busy, it cones with the repetition, with discipline and focus. We (chefs) watch every single plate before it goes out to the guest. We want the garnish set in the exact right spot over the plate. We want the meat to rest not too little, not to long, but long enough to stay juicy, and tender. We know the excellence is in the details, and this routine turns our job, into our passion, and that passion; becomes our life.
