“Unrecognizable.”
Six years ago, I plated a version of this dish I was proud of at the time. I can barely look at the photo now. That’s what this carousel is: a small confession in ten frames. Early attempts, wrong techniques, plating ideas that made sense in my head and fell apart on the pass. I kept them all, because this is what I love most about the work: the pulling apart, the rebuilding, asking why something works instead of just asking, “ Does it work.’ Recipe development isn’t just something I do. It’s the thing I’m proudest of getting good at: building something from scratch and having the patience to keep refining it, and it’s the thing that still lights me up after all these years.

Every version here carries a piece of someone else too like my mentor @cheflahrman @stregisdv who kept helping me build this dish over the years after I left his kitchen. Chefs who corrected my knife angle without a word. Mentors who let me fail in their kitchen so I wouldn’t fail in my own. I carried this dish through kitchens that didn’t feel like home, through cities that changed how I thought about acid, heat, and patience. Cultures that showed me one ingredient can mean five different things depending on who’s holding the knife. Every failed dish taught me something the successful ones couldn’t. Copying a recipe gets you a plate. Understanding it gets you a point of view.
That last photo isn’t a finished dish. It’s six years of building from nothing, getting it wrong in more interesting ways, and trusting a process before I could see where it led.
