Of all the places I want to travel this year, can you guess which country is first on my list?
•
•
•
Despite all the madness happening in the world right now, overseas and here in this country, I’m still encouraging myself to branch out and continue #traveling. One of my passions in life is travel. I remember the first time I watch an episode of no passport required, thinking, this guy is doing exactly what I am supposed to be doing. At that time I knew nothing about the world or myself, but I knew that I wanted to #explore and try as much food as possible in the process.

Let me know what you think about this…

Aside from her being responsible for the first video on my Instagram, she’s been a career inspiration to me. The matriarch of the family and ultimate recipe holder lol.

How many of us have the privilege of saying we have a family member who is alive at 80? Now how many of us are privileged enough to be able to spend time with that person?

Of the 30 years I’ve been on this earth, this woman has been willing to give the shirt off of her back to not only me, but anyone in our family.

Happy birthday, Grandma Azieb. I’m praying for many more. taken in Rome, Italy by @chefkhalieb

Why don’t more people do this?
•
•
I love making sambusa with a filling that is more moist like an empanada or Samosa rather than dry. I love sambusa in all its forms though, I really don’t believe there is a wrong way to make your filling.
•
I’m grateful for my Aunty Addis who showed me her method to roll Sambusa. I’ve never rolled my Sambusa like this so I definitely learned something from her and hopefully you did too…
•
Also, Please help me give a BIG HAPPY BIRTHDAY shoutout to my lovely aunty Addis 🎂

How is Berbere made?
•
Start by drying your onions, garlic, and peppers and collecting them in a sac to be taken to the processing mill. You know your taxi is down the street from the mill when you start to smell berebere. We take the sac to the mill and ask for our berebere to be processed fine after adding in other important spices offered by the market like ginger and nutmeg.
•
While it’s being processed, explore the market and see as hardworking locals manage to build, fix, and create essential house held items and machinery. The market is busy and loud.
•
Next I’ll show you how I like to enjoy my fresh Berbere spice 🤤 #berbere #asmara #eritrean🇪🇷 taken in Asmara, Eritrea by @chefkhalieb

My first few days in Eritrea I went to a festival called EXPO, it’s like a celebration of the Nine Ethnic Groups of Eritrea, which are:
Tigrinya
Tigre
Afar
Saho
Bilen
Hedareb
Kunama
Nara
Rashaida
•
My family is Bilen but I was happy to learn from and be embraced by all of the tribes. Especially the Afar. They taught me a lot about the fishing culture and the seafood that sustained the people for years. by @chefkhalieb

Berebere is that staple spice in every habesha house hold but would you ever put it on dessert?

This is how Eritrean’s get their food to be spicy and flavorful…
•
This day in Eritrea, I went with my aunty to the market where they process Berbere. We gathered our own blend of chili peppers, dried garlic and onions, and spices and headed to the market where the sisters use a giant spice mill to grind down all the ingredients into the most flavorful spice for us.
•
Berbere is the one spice you will find In every single home in Eritrea. It’s used in so many different dishes from breakfast to lunch and dinner, I even use it in dessert sometimes ssshhh 🤫🤫🤫 taken in Asmara, Eritrea by @chefkhalieb

My first few days in Eritrea were filled with explorations of the local market in Asmara known as “Shok” or Merkato.
•
A shopping experience completely perpendicular to that of the US. In Eritrea, Cash is King, and EVERYTHING is organic. Nothing is factory produced or overly processed. Plus the only chicken for purchase, is catch and kill, hard body.
•
If you really enjoy the natural flavor and taste of your fruits and vegetables, and you appreciate organic eggs and fresh milk and yoghurt, not to mention fresh baked bread, you would love it here in this country… taken in Asmara, Eritrea by @chefkhalieb
