Vanilla beans are one of the most expensive spices in the world, so why let them go to waste? 👨‍🍳

Chef Chavez shares two simple ways to get the most out of your vanilla beans, even after scraping or drying them out. Add them to an existing bottle of extract to enhance the flavor, or place them in sugar to make homemade vanilla sugar for your coffee, tea, and baking. For homemade vanilla extract, soak the beans in a mixture of 2/3 alcohol and 1/3 water. Vodka works great, but whiskey or rum can add their own unique flavors.

At culinary school, it’s all about learning to use ingredients wisely, minimizing waste, and getting the most out of every ingredient. 🌿

I made 1000 chocolate chip cookies for @victoriamonet new album release this week. Most don't know that she spent 2025 both working on a new album AND going to culinary school. Amazing dedication and truly a nice and humble person. It was my pleasure to do this for her. #chocolatechip #pastrychef #delicious #cookie #grammywinner by @chefsoulman
