We thank the @michelinguide for this recognition and extend our congratulations to everyone included in this year’s California selection, congratulations!

To be recognized with three Michelin stars for a nineteenth consecutive year is something we don’t take for granted. What stays with @lauragcunningham and me today is a deep sense of gratitude for the people who make this possible and for the guests who allow us to be part of their lives and celebrations year after year.

Nineteen years is not simply a measure of consistency. It is a reflection of thousands of days of commitment, discipline and finesse. It’s remarkable to think about the many talented individuals who have contributed to The French Laundry. This recognition belongs to all of us.

We had the privilege of hosting Vins d’Exception: four independent estates within LVMH united by an uncompromising standard of excellence.

For the first time, the principals of all four houses gathered in our dining room: Pierre-Olivier Clouet of Château Cheval Blanc, Lorenzo Pasquini of Château d’Yquem, Jacques Devauges of Domaine des Lambrays, and Ann Colgin of Colgin Cellars. Rare magnums and large formats were poured course by course—from Le Petit Cheval Blanc 2021 with Regiis Ova Reserve Caviar and Japanese Hamachi Sashimi; Domaine des Lambrays Puligny Montrachet 2021 with Grilled Scottish Langoustine; Clos des Lambrays Grand Cru 1999 and 2020 alongside Australian Black Winter Truffle “Agnolotti”; and Colgin Cellars “IX Estate” Syrah, 2010 and 2021, with a Gruyère Cheese Tartelette—to a Château d’Yquem Sauternes 1946 to close the evening.

Chef Thomas Keller, Chef de Cuisine, Ara Jo, and our entire team were honored to compose the menu around these extraordinary wines. And an enormous thank you to Cole Rockwell of Colgin Cellars, Sommelier Andrew Adelson and General Manager, Michael Minnillo—whose care and precision made the evening possible.

There are kitchens you walk into, and kitchens that find you. At eighteen, Isaac Galan took a part-time job washing dishes at Spago Beverly Hills—a temporary stop, he thought, on his way to a career in teaching. The discipline of dishwashing gave him his footing, and the morning produce deliveries gave him his curiosity. Encountering white asparagus, rainbow cauliflower and varieties of mushrooms he had never seen before, he began researching recipes and cookbooks in his spare time. He soon found his way into the prep kitchen and eventually onto the line, cooking thoughtful meals for his team each day.

In 2018, he joined The French Laundry as a commis, beginning where so many cooks who become leaders begin: peeling potatoes, making pasta, preparing stocks. Over six years, he rose through the brigade to become the restaurant’s Sous Chef.

Today, we welcome Chef Isaac Galan as our new Chef de Cuisine at Ad Hoc.

In his approach to menu planning, he begins with the seasons, allowing peak-quality ingredients to lead the way and embracing the creative possibilities each time of year brings. He brings that same spirit of curiosity and care to the warm, communal cooking that has made Ad Hoc a gathering place. I’ve always considered my mother, Betty, both a teacher and a mentor. She taught me discipline, attention to detail, and pride in doing things the right way. From my earliest jobs to today, I still think about the example she set.
