Who says spinach is just for salads? 😉 This Lehsuni Palak Paneer is a velvety smooth, punchy, and seriously satisfying curry that's perfect for a weekend treat. It's packed with protein and iron—and amazing flavor!

Here’s how I make this vibrant green curry:
Prep the Greens: Blanch the spinach in salted water with a pinch of soda bicarbonate (that's the secret to preserving the bright green colour!). Shock it in cold water, squeeze it dry, and blend with ginger-garlic paste, green chili, mint, and coriander leaves.

Tadka Time: In a pan, heat ghee and fry cumin seeds, whole red chillies, and lots of chopped garlic until golden brown. This is where the 'Lehsuni' magic happens!

Gravy Base: Add onions and sauté until brown. Stir in your dry spices: coriander powder, red chili powder, turmeric, cumin powder, and garam masala. Add chopped tomato and cook until soft, using a splash of water if the spices get too dry.

Simmer & Finish: Pour in the spinach blend, season with salt, and simmer for about 15 minutes. Add water to get your perfect consistency, then drop in your cubed paneer (or tofu). Simmer covered for another 10 minutes.

Serve this gorgeous curry with warm naan or rice and enjoy!

Forget every other curry—this Mushroom Cashew Curry is a game-changer! 🍄 It’s rich, creamy, and packed with incredible flavor. My secret? Creating an umami-rich mushroom stock right in the pan!

Here’s the recipe for this decadent dish:
The Paste: Sauté pink onions, green chilies, ginger, garlic, coriander stems, and cashews with a pinch of salt until the onions are soft. Blend this mixture with yogurt and water until perfectly smooth.

Mushroom Magic: In a separate pan, fry some whole cashews in ghee. Then, sweat your mushrooms in oil with salt and garlic. Pro Tip: I wash my mushrooms! The absorbed water releases as they sweat, creating a concentrated, flavorful mushroom stock right in the pan. Set the mushrooms and stock aside.

Build the Gravy: Heat oil and whole spices: cumin seeds, black and green cardamom, cloves, cinnamon, and a bay leaf. Add the blended paste and cook for about 5 minutes until the raw smell is gone, adding warm water if it sticks.
Stir in coriander powder, black pepper powder, kasuri methi, salt, and a touch of sugar.

Finish: Add the fried cashews and the mushrooms with their stock. Simmer until the cashews are tender. Garnish with fresh coriander and serve!
Try this wonky but amazing curry and let me know your thoughts! 👇

Who else loves a good Pav Bhaji?! 🤤 This spiced vegetable mash with butter-toasted pav is the ultimate comfort food. While my recipe might not be restaurant-style, it’s still incredibly flavorful and so satisfying to make at home.

Here's my go-to recipe:
Chili Garlic Paste: Rehydrate dried red chilies in hot water. Blend with garlic, ginger, and a pinch of salt to create a thick paste.

Boil & Mash: Pressure cook or boil potatoes, cauliflower, carrots, beans, and peas with salt until tender. Mash them up and set aside.

Create the Bhaji Base: In a large pot, heat up cooking oil and a generous amount of butter (skip the butter if you want to make it vegan). Sauté onions until they soften, then stir in your chili garlic paste. Cook until the raw aroma disappears.

Simmer: Add chopped tomatoes and tomato puree. Cook until the oil begins to separate, then mix in pav bhaji masala, raw mango powder, and salt. Cook until the oil separates again.

Combine & Cook: Add the mashed vegetables and a little water. Simmer on low heat, partially covered, until the raw flavors are gone. Taste and adjust salt as needed.

Serve this deliciousness with a side of salad and some perfectly butter-toasted pav/dinner roll or gluten free bread. It's a full, satisfying, and nutritious meal!

🍕🔥 Smoky Masala Pizza? Yes Please!

When I was asked to make pizza sauce for a party, I knew I had to give it a desi twist. So I went bold with flavour:

🌶️ Charred red pepper, tomatoes, red onion & garlic over open flame
🌿 Blanched coriander & basil
🫒 Blended with olive oil, then cooked with smoked paprika, crushed black pepper & salt

The result? A Smoky Masala Pizza Sauce — not a marinara, but 100% 🔥 in flavour!

🎯 And for the base? We used tortilla wraps — fast, crispy, and genius.
🧀 Mozzarella between 2 tortillas
🍕 Sauce + your favourite toppings (yes, we added pineapple!)
🧀 More mozzarella + cheddar on top
🔥 Baked at 180°C till melty and golden

💥 It’s pizza done in 15 mins, and honestly? It slapped.
Try it, remix it, and tag me when you make yours!

Chickpea Curry (Chole) – the real flavour bomb 🌶️🌿
Naturally vegan and gluten-free, this North Indian-style curry brings warmth and depth with every bite.

Start by soaking dried chickpeas overnight, then boil them with cloves, cardamom, bay leaf, and a tea bag (yes, really – it deepens the colour and flavour!).
Once cooked, reserve the liquid and crush a handful of chickpeas to help thicken the gravy.

For the masala:
Sauté cumin, whole red chillies, ginger, and chopped onions in oil. Once browned, add tomato purée, red chilli powder, coriander powder, amchur (raw mango powder), chole masala, tamarind pulp, chopped mint, and salt. Cook till the oil separates.
Add the chickpeas, a bit of mashed chickpeas, the reserved water to adjust consistency, and let it simmer till rich and flavourful. Finish with a pinch of sugar to balance it all.

Garnish with fresh ginger juliennes, and serve with rice, naan, puri, or paratha — comfort food at its finest 🫶

Nothing beats the comfort of a warm bowl of Paneer Matar 🫛🧀

A staple in many Indian homes, but it never gets boring.
I switched things up by using tomato passata instead of fresh tomatoes — paired with onion, green chilli, ginger-garlic paste, and slow-cooked with cumin, mustard seeds, bay leaf, hing (asafoetida) till the spices released their oil (the real magic moment ✨).

Added warm water to keep the flavour developing, then tossed in peas, paneer, cream, and finished with fresh coriander. Served with flaky paratha — the perfect weekday win.

What started as “I’m too lazy to cook” turned into a full-blown dinner 🍛
Made this quick and comforting Coorg-style Potato & Green Peas Curry in the pressure cooker — sautéed onion, ginger-garlic paste, tomato purée, red chilli, turmeric, coriander, black pepper, Coorg masala, and a pinch of sugar.

And while that cooked, I turned plain rice into a fragrant peas pulao with cumin, whole spices, green peas and ghee — all in the rice cooker.
Surprisingly quick. Definitely tasty. Accidental wins like these keep the kitchen fun ✨

I should have something simple for dinner.
Also me: Creates an indulgent, Shahi-style Paneer curry made with a rich blend of cashews, pistachios, almonds, mint, and Indian whole spices like clove, cardamom, cinnamon, mace, and white pepper, Dried fenugreek leaves — slow-cooked and finished with a swirl of single cream.

No turmeric. No chilli powder. Just creamy elegance, layered with depth and flavour. Served with flaky paratha, because simple clearly isn’t in my DNA.

✨ Not quite simple, but 100% delicious.
