Italian Sausage & Garden Greens Pasta 🍝🌿

!Another recipe worth writing down!
This one started with Italian sausage, onion and garlic cooked down in a little butter, then deglazed with Pinot Grigio. I added red pepper flakes for a little heat and let everything cook down while I made the green sauce.

For the sauce, I blended together fresh basil, spinach, kale, arugula, Parmesan, olive oil and a squeeze of lemon. Think pesto-ish, just with a lot more greens.

Once the pasta was cooked, I reserved about a cup of pasta water before draining. Then everything went back together—the pasta, sausage mixture and green sauce—with plenty of freshly grated Parmesan. I slowly added the pasta water while tossing until the sauce was smooth and coated every piece of pasta.

No heavy cream needed. The Parmesan, pasta water and olive oil do all the work.

What I used:
• Italian sausage
• Pappardelle pasta
• Onion + fresh garlic
• Butter
• Dry white wine (I used Pinot Grigio)
• Red pepper flakes
• Fresh basil
• Spinach
• Kale
• Arugula
• Parmesan
• Olive oil
• Fresh lemon juice
• Salt + pepper
• Reserved pasta water

I didn’t measure much of anything, so consider this less of a strict recipe and more of a “make it until it tastes right” situation. 😂

And yes, bread on the side is necessary for whatever sauce is left in the bowl. taken in Guntersville Lake by @chicsllc

Cheesy Spinach & Prosciutto Egg Bites 🥚🌿

I made these on a whim yesterday, and they turned out so good I had to write the recipe down before I forgot it. 😂 They’re cheesy, fluffy, full of spinach and crispy prosciutto, and the Greek yogurt makes the eggs extra creamy.

They’re also perfect for meal prep — make a batch, freeze them, and reheat whenever you need an easy breakfast!

CHEESY SPINACH & PROSCIUTTO EGG BITES
Makes 12

Ingredients

* 12 large eggs
* 2 heaping tbsp plain Greek yogurt
* 2 handfuls fresh spinach
* 2 tbsp Italian seasoning
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp salt
* ½–1 tsp black pepper
* Pinch of crushed red pepper
* Prosciutto, cooked until lightly crisp*
* 2 cups shredded cheese, plus extra for topping
 (I used cheddar + a Mexican cheese blend)
* Cooking spray

Directions

1. Preheat oven to 380°F and generously spray a 12-cup muffin pan with cooking spray.
2. Add the eggs, Greek yogurt, spinach, Italian seasoning, garlic powder, onion powder, salt, pepper and crushed red pepper to a bowl. Blend with a handheld immersion blender until the spinach is finely incorporated and the mixture is smooth.
3. Cook the prosciutto in a skillet until lightly crisp. Let it cool slightly, then roughly chop or crumble it.
4. Stir the cooked prosciutto and 2 cups shredded cheese into the egg mixture with a fork.
5. Divide evenly between the 12 muffin cups and sprinkle a little extra cheese over each.
6. Bake for approximately 15–18 minutes, or until the centers are set. For a little more browning on top, you can bake them at 400°F for around 15 minutes instead. Eggs should reach 160°F in the center.
7. Let cool for a few minutes before removing from the pan.

*You can easily swap the prosciutto for bacon, sausage, ham, turkey sausage — or leave the meat out altogether.

For meal prep: Once completely cooled, refrigerate for a few days or freeze individually for an easy grab-and-go breakfast.

Simple ingredients. Quality flavors. Summer on a plate. 🍅✨

Creamy burrata, delicate prosciutto, garden-fresh tomatoes, and a sprinkle of herbs. Sometimes the best meals are the ones that let every ingredient shine.
