@chilimaven all natural Mole Almendrado has found it's way in my kitchen a lot lately because it's simply one of those food-things that remind me of how grandiose and sophisticated ancient civilizations could be in their cooking! The idea of combining so many ingredients together like cacao beans, chilies, nuts and plantains to create something so delicious, complex, sophisticated and TIMELESS is what always has me wanting to cook with mole again!!!

Here with roasted pumpkin & celeriac (for that nice comfy autumn vibe) topped with my Tante Maha's homemade doqqa that I brought back from Egypt and lots of fresh mint.

Turns out Egyptian doqqa and Mexican mole are a match!

💀 Day of the Dead Festival with @mexibrits at @canopy_market in Kings Cross

🌹 And for the first time, we'll be traveling for our Chile Masterclass to @barrowfull in the Lake District, along with a salsa tasting for kids. Really excited about this one! by @chilimaven

When I was in London a while ago, I grabbed a pack of this VERY, VERY GOOD Mole Almendrado.

I'm a huge fan of Mexican cuisine, you see so many traces of ancient pre-Hispanic culinary genius that continues to live on.

Mexico gave the world an enormous part of the modern pantry, especially through Indigenous Mesoamerican agriculture. Maize/Corn, tomatoes, chiles, cacao, squash/pumpkin, vanilla etc...

When I used to live in the US, I was exposed to a lot more Mexican food culture, and also got to travel to Mexico a few times (a country forever in my heart)

One specialty I was starstruck by was Mole. All the different kinds, but especially Almendrado.

All those ingredients coming together to make something that tastes exceptionally unique. It tastes unlike anything else.

And @chilimaven 's mole tastes really delicious.

I used it 2 ways here- sans chicken or meat!!!! First with roasted crispy eggplant and then with charred cabbage! Both go very well with mole!

🌮 Birria tacos: the shortcut you need to know

Chili Maven's MILD & SMOKY salsa macha! It already has ancho, guajillo, pasilla and garlic in it, so half the work is done before you start.

Rub half a jar onto beef short ribs and braise until they fall apart. Fry the tortillas in the fat, fill, fold and crisp. Then dunk them in the consome. Add mozzarella and you've got a quesabirria.

Save this one for the weekend, when you need a hangover cure!

Chillies are at the heart of Mexican cooking, and they’re full of flavour, not just fire: each one has its own personality, from smoky and earthy to fruity, floral and sweet.

🤠Join us at Hungry Taco on Tuesday 20 October to meet Mexico’s essential chillies fresh and dried, learn how soil, sun and water shape their flavour and heat, and discover how they come together in iconic Mexican dishes like mole and salsas, which you’ll taste on the night.

The class is led by Alexa Fernandez, founder of Chili Maven @chilimaven who brings authentic Mexican condiments and sauces to the UK from artisan producers in Mexico.

🌶️ Chili Maven is back 🌶️

It's been awhile since we were fully stocked everywhere, so back on the shelf of these wonderful stockists means a lot! Thank you to each and every one for keeping the faith 🙏

The one thing all of these stockists have in common is that they are focused on creating a community and that is what makes them extra special 🥰

Community-focused deli in Croyden run by two sisters and one of our very first stockists!

This shop is at the heart of Bonnington Square in Vauxhall. They host supperclubs and events, and sometimes you'll find Charlie the owner playing his violin. Interesting fact: Chili Maven's first magazine mention came from an editor of Home & Garden who discovered our salsa macha at Italo!

Londis N16 were the very first ones to order once we were back in stock!

Laura's Larder is a treasure trove of speciality products. They host taco nights and have used Chili Maven products like these honey chicken mole tacos 🌮

Greensmith's is a gorgeous deli in Waterloo, with amazing sandwiches and a butcher in house. You can see Andy doing a Chili Maven tasting about 1 year ago!

The Deli Downstairs came to us after a recommendation from another stockist, and a request from one of Chili Maven's clients! Here is Melissa conducting a tasting last year.

Hungry Taco just opened a new restaurant and they will be selling Chili Maven salsa macha. We've gotten to know them at the Mexican festivals and love their birria tacos 🌮

Taco Bros started off as a food truck and now have their very own restaurant & cocktail bar near Finchley. They serve Chili Maven mole as a main dish, you must try it!

R Garcia & Sons on Portobello Road is a specialty Spanish deli, but they have a huge Mexican section and we're so happy to be back in Notting Hill! by @chilimaven

Imagine a private club where all the members are food & drink brands. That place exists, and it's called Mission Kitchen 👩‍🍳

Once a year @mission.kitchen opens its doors and we get to show off our brands. Can you imagine how tasty it was?
