When @chopnboard reached out to me about a secret menu drop, I didn't know what to expect. I crossed my fingers, ordered the Humba, and hoped for the best. Little did I know this dish was going to rock my world!

Humba--Fire roasted pork ribs, soy/vinegar, plantains, banana blossoms, salted black beans, java rice

I loved every bite (as you can see on my face) and I have been patiently waiting for another menu to drop!

If you're lucky enough to grab a menu, trust your gut and order!

This is my baby... it is a humbling Filipino dish that I wasn't really a fan off growing up because on how tough the meat(chewy ass sirloin) usually is. So I look for other cuts and a change of execution as part of pushing this forward. It took some time but hey, it was all worth it. 🇵🇭😎

PS: no need to use wagyu for this... a well marbled cut of beef is more than good enough 🤙🏽 taken in USA East Coast by @chopnboard

crispy pata w/ L.A. slaw
This test is quite interesting. So the first thing when we think of when it comes to crispy pata, it has to be crispy(obviously). For this one, I really want to focus on how to flavor the meat properly first before making the skin crispy. I made sure every step had some flavor being incorporated into the pork leg. It wasn’t as crispy as I wanted to but the meat is flavorful and moist as sh!t so it wasn't so bad of a test. 🤙🏽🇵🇭 taken in USA East Coast by @chopnboard
