Heavy Metal Pupusas. 🤘🇸🇻

That’s exactly what Chef René calls his food—and it’s one of the biggest reasons I wanted to tell his story.

Escargot pupusas. Octopus pupusas. Birria pupusas. Even pupusas with consommé infused into the masa.

At first glance, it sounds rebellious.

But after spending time with Chef René and Chef Stephanie, I realized they’re doing something much bigger.

They aren’t changing Salvadoran food just to be different.

They’re telling the story of Los Angeles through pupusas.

Growing up in LA shaped who they are, and you can see it in every dish they create—from changing the masa itself to creating flavors inspired by the city and cultures around them.

My favorite? The Savior, their fried pan con pollo. I still think about it.

Walking Spanish started during the pandemic as a leap of faith, and today they’re helping redefine what Salvadoran cuisine can look like while honoring the traditions that came before them.

To me, that’s the beauty of culture.

It evolves.

Every generation leaves its fingerprint, and Chef René and Chef Stephanie are leaving theirs.

Episode 2 of Salvi Food Tour lands @popoca.oakland in Oakland, where chef Anthony Salguero blends deep tradition with fearless technique—serving pupusas de lengua, salpicón tartare, and cocktails stirred with nostalgia. 🍴🍹

Popoca means “to emit smoke” in Nahuatl, and here, smoke is more than flavor—it’s heritage. With a wood-fire hearth at its center, the restaurant reimagines Salvadoran cooking through heirloom corn masa, fine-dining precision, and a vision rooted in both memory and innovation.

Salvadoran food is evolving, led by a new wave of Salvi chefs and cultural amplifiers who are rewriting the story of our cuisine in real time—and we’re here to capture it.

🇸🇻🇬🇹 From street vending to West Hollywood. ❤️

I couldn’t be happier for Chef Stephanie and René Coreas of @walkingspanish.losangeles!

I’ve watched their journey from street vending to residencies, to setbacks, to returning to their day jobs as chefs, and now bringing their food to a beautiful space like Blondie in West Hollywood.

What originally drew me to Walking Spanish was their fried pan con pollo. Growing up, pan con chumpe were some of my favorite foods, and seeing someone take something so familiar and completely make it their own immediately caught my attention.

There’s something rebellious about René’s cooking, but you can tell it’s done with so much love and care. I relate to that. As a Salvadoran-American, I’m constantly exploring what it means to connect with my roots while making something that feels uniquely mine.

And that’s exactly what I love about Walking Spanish.

One of my biggest surprises of the night was how they reimagined the traditional yuca con chicharrón with pork belly, a panela glaze, yucca, and curtido. They took a dish I grew up with and transformed it into something completely unexpected, yet every bite felt familiar. Easily my standout dish of the night! 🤌

Seeing Central American cuisine presented in spaces like Blondie means a lot to me. Not because our food needs validation, but because we deserve to be in these spaces, too. Our traditions deserve room to evolve, experiment, and be celebrated.

Steph and René, I’m proud of you both. Watching friends continue to invest in themselves, even through uncertainty and setbacks, is genuinely inspiring. Taking that leap is scary, but seeing moments like this reminds me why it’s worth it.

I hope you never stop pushing yourselves. I can’t wait to see where this journey takes you, and hopefully one day we’ll all be walking through the doors of Anali. ❤️

If you want to learn more about Walking Spanish, their story, and the people behind the food, check out our Salvi Food Tour episode right here on my page or on YouTube! 🎥

Here’s to celebrating the small wins on the way to bigger dreams. 🥂

After every screening, men told Ray: “Bro… I probably would’ve followed her too.”

Women told him: “He deserved it.”

🇸🇻🇬🇹 WALKING SPANISH IS BACK! 🔥

After nearly a year-long break, @walkingspanish.losangeles is popping up at Blondie in West Hollywood this Sunday, October 25th!

As a Salvadoran, I’m hyped to see a concept we featured on Salvi Food Tour continue leveling up and putting Central American cuisine on the map! 🙌

Here’s what I’m excited to eat:

🍄 Grilled Mushrooms – A nod to Guatemalan jocón, with tomatillo, leeks, and salsa macha.

🫓 Pupusa Flight – Three creative takes on our beloved pupusa. If you know, you know!

🥪 Fried Chicken Sando (aka my pan con pollo fix!) – You bet your ass I’m getting one… or three. 😂

🐙 Charred Octopus – Achiote, pepián, and dragon tongue beans!

🍸 Plus, handcrafted cocktails by @mochesips!

Honestly, I’m excited for EVERYTHING on this menu. Get one of everything if you can!

🩸 HE SPENT HIS SAVINGS MAKING A HORROR MOVIE. THE FIRST NIGHT ALMOST BROKE HIM. 🎃

When my brother Raymundo set out to make Manhunt, he wanted to bring La Siguanaba, a Salvadoran legend we grew up hearing about, to the screen. He wanted to make the kind of horror movie that keeps everybody at the edge of their seat.

But making that nightmare a reality? That was its own horror story. 💀

When Ray first told me he wanted to make this movie, my reaction was simple: “Fuck it. Full in. Puro gas.” 🔥

I’d watched my little brother make films since he was a kid. I’d given him little projects here and there and seen him keep chasing that dream. But Manhunt was different. I walked onto that set and felt like I’d stepped onto a Hollywood production. Cameras everywhere. Actors. Extras. A whole crew bringing his vision to life.

My little brother was actually doing it.

Ray put his personal savings into the film, called in favors, and pulled friends and family together to make it happen. On set, he wore so many hats. He was directing, shooting as cinematographer, putting out fires, and racing against daylight.

By the end of the first night, he was exhausted, overwhelmed, and emotional.

The next day, he had roughly 30 EXTRAS to manage. Somehow, that felt easier. 😂

Manhunt was always about more than a scary legend. Ray wanted to explore the monsters we carry into our relationships, the damage we do, and the consequences we can’t outrun.

Inspired by the folklore we grew up with, Manhunt puts a sinister spin on a familiar warning: be careful who you follow into the dark.

👀 Would YOU have followed La Siguanaba?

Back at Popoca! 🇸🇻🔥

I recently visited the Bay Area and got the chance to revisit Popoca in Oakland to try some new menu items!

It’s always exciting to see how Chef Anthony Salguero continues to evolve Salvadoran cuisine.

Swipe to see what I ate! 👀🍽️

Starting off strong with the Ceviche Mixto Negro!

Super refreshing, delicious, and packed with flavor. I especially loved all the herbs and the plantain chips.

The chips almost gave it that same experience of eating ceviche on a tostada, but with a different texture and flavor.

Such a nice touch. Highly recommend! 🔥

I’ve been wanting to try this pupusa for OVER A YEAR! 😭🔥

And I finally got my hands on Popoca’s Pupusa de Lengua, made with beef tongue, queso, and recaudo.

Let me tell you… it did NOT disappoint!

The lengua was beautifully prepared, and everything just worked together. I paired it with some salsa de tomate and curtido. Every bite just hit 😋

Had to capture that first bite! 👀🔥

After waiting over a year to try this pupusa, you already know I had to document the moment.

This is the kind of creativity I love seeing in Salvadoran cuisine. Familiar ingredients, new interpretations, and a whole lot of flavor.

This one reminded me of home. 🇸🇻❤️

The Veranito Loco is a summer squash and bean salad with salsa negra, leek mayo, queso duro, and herbs.

It’s a little pungent, tangy, and full of those familiar Salvadoran flavors I grew up with.

Hard to explain, but it just tastes like home. Definitely worth trying!

Couldn’t leave without bringing a little something home! 🍷

Picked up a bottle of Flor y Humo, a chilled red wine from Berkeley’s Hammerling Wines, listed on Popoca’s menu alongside Gamay.

It’s a 2023 blend of Petite Sirah and Gamay.

Haven’t opened it yet, but I’m excited to share this one with loved ones soon. ❤️

If you haven’t visited Popoca in Oakland yet, it’s a MUST! 🇸🇻🔥

I love seeing Salvadoran cuisine continue to evolve while staying connected to the flavors and traditions we grew up with.

Always a pleasure seeing what Chef Anthony Salguero and his team are cooking up.

Go show them some love! ❤️ by @cinemundollc

@walkingspanish.losangeles never stopped cooking. They were just plotting their next move. 👀🇸🇻🇬🇹

If you watched Salvi Food Tour Episode 3, you already know how much I love what Chefs @abstract_hybrid and @ohstphyiam_ are creating with Walking Spanish.

After going from pop-ups to a West Hollywood residency, they eventually went back to working as chefs in restaurants, but Walking Spanish never stopped.

Behind the scenes, they kept cooking, experimenting and doing R&D.

And now Walking Spanish is popping up again. 🔥

On October 25th, they’re taking over Blondie on Melrose, bringing back some of the dishes that made me fall in love with their food in the first place, including Shatto 39, their galbi short rib pupusa with scallion and kimchi.

And we might even get a special appearance from the legendary Escargot Pupusa. 🐌😂

I’ve been lucky enough to sit in on some of their R&D sessions, and trust me, I’m excited for y’all to see what René and Stephanie have been working on.

That’s what I’ve always loved about Walking Spanish. Their food reflects who they are: Salvadoran 🇸🇻, Guatemalan 🇬🇹, classically trained and shaped by Los Angeles, pulling inspiration from the cultures and kitchens around them.

This isn’t really a comeback.

They never stopped creating. Now we get to eat it again.

Sometimes the best seat in the house is behind the camera. 🎥🇸🇻

Thank you, Tony Escoto, for trusting me to capture your halftime performance for Central American Heritage Night at LA Galaxy.

As a filmmaker, there’s something special about being invited to document moments like this—especially when the person in front of the camera is also a friend and colleague whose journey I’ve gotten to witness over the years.

Big or small, no matter the size of the stage, it’s always a privilege to be trusted to capture a piece of someone’s journey.

Tony is a professional bayunco 😂—but underneath all of that, he’s also a lifelong, classically trained musician, and when you see him perform live, it shows.

I hope this is only one of many bigger stages and opportunities still ahead of you, bré.

And if you caught his LA Galaxy performance and enjoyed it, keep supporting him. Tony has another show coming up in San Francisco, so follow him for new music, upcoming shows, and whatever comes next.

Support Central American artists. Support nuestro talento salvadoreño. 🇸🇻

Thank you again, Tony, for continuing to trust me behind the camera and letting me capture a piece of the journey.

Here’s to the next stage. 🎥🎶🇸🇻 by @cinemundollc
