Apple season šŸŽšŸ‚ — and what better way to celebrate it than with a beautiful savoury dish?

Crispy-Skinned Sea Bass, Cider-Braised Fennel & Caramelised Apple

A simple autumn recipe that feels restaurant-worthy without being complicated.

The combination of sweet apple, aromatic fennel and dry cider creates the most delicious sauce for crispy golden sea bass. Light, elegant and full of autumn flavour.

RECIPE ↓

Serves 2

• 2 sea bass fillets, skin-on
• 1 apple, thinly sliced
• 1 small fennel bulb, thinly sliced
• 150ml dry cider
• 100ml fish stock
• 2 tbsp creĢ€me fraiĢ‚che
• 1 tsp Dijon mustard
• 1 tbsp butter
• 1 tbsp olive oil
• 1 tsp fresh thyme
• ½ lemon
• Salt & black pepper
• Fennel fronds to finish

Method

Season the sea bass and pat the skin completely dry.

Sauté the fennel in olive oil and butter until softened. Add the apple and thyme and cook for another couple of minutes.

Pour in the cider and simmer until slightly reduced. Add the stock and reduce again, then stir through the Dijon and crème fraîche. Finish with lemon juice and seasoning.

For the sea bass, heat a little oil in a non-stick pan. Place the fish skin-side down and cook until deeply golden and crisp. Turn and cook for another 1–2 minutes.

Spoon the cider-braised fennel and apple onto the plate, top with the crispy sea bass and finish with fennel fronds , @wearegoodphats chilli olive oil and lemon zest.

šŸ‚ Easy enough for a weeknight, special enough for a dinner party.

Ad Another 30 before 30 getting a big fat tick !! with @circulonuk and their incredible cookware šŸ™‚ā€ā†•ļø

I had so much fun last week getting to learn some completely new culinary skills šŸ£ while also putting some seriously impressive cookware to the test. AD| Japanese Soufflé Pancakes 

I was asked to create something brave using my Circulon cookware, and I decided what could be better than attempting these super-fluffy Japanese soufflé pancakes?! šŸ˜

I used my Extreme non-stick sauté pan and honestly, they turned out to be some of the most amazing pancakes I’ve ever made! 🤤

What you need:
•2 eggs
•3 tbsp sugar
•2 tbsp milk
•2 tbsp plain flour
•A splash of vanilla extract
•A little vegetable oil
•2 tsp water

Method:
1. Separate the egg whites from the yolks.
2. Add the flour, milk and vanilla extract to the egg yolks. Whisk until smooth, being careful not to overmix.
3. Add ā…“ of the sugar to the egg whites and whisk until frothy. Add another ā…“ and continue whisking until the mixture starts coming together. Add the remaining sugar and whisk until you haveĀ stiff peaks. I find this works best on a medium setting with a hand mixer, using cold egg whites.
4. Add a small amount of the meringue to the yolk mixture and gently mix through.
5. Carefully fold in the remaining meringue in stages, taking care not to knock out all that lovely air.
6. Heat your pan on aĀ low settingĀ - don’t get it too hot or the pancakes will burn before they cook through.
7. Add a small amount of vegetable oil and spread it evenly over the pan.
8. Pipe the mixture into the pan or add large spoonfuls. Try to build the pancakesĀ upwards rather than spreading them out. I made two pancakes at a time.
9. Add 2 tsp of water to the pan to create steam, then cover with the lid and cook for 4–5 minutes.
10. Remove the lid, add a little more batter on top of each pancake to build up the height, then add a little more water and cover again. Steam for another 4 minutes.
11. Gently flip the pancakes and cook for a further 3 minutes.

Serve themĀ hot, with your favourite topping, before they have a chance to deflate!Ā

AD I went to a Japanese inspired cooking class hosted by @circulonuk and this what we made.
 
Sake cocktails, vegetable maki, gyozas and teriyaki chicken all cooked
using Circulon’s Clad Stainless Steel and Halo LaserDefense pans. The
non-stick performance on both was something else, with crispy gyoza
bases, perfectly caramelised chicken and most importantly nothing
stuck.
 
I’d never done a Japanese cooking class before and this was the
perfect introduction. Circulon is built to last and built for the
brave and after that night I completely get why.
