I'm absolutely gutted to hear of the sad passing of Sir Patrick Stewart. A titan of theatre and film and he was an absolute gentleman to sign my X-Men Schism No.1 when Stephanie met him at Wimbledon. And he called me a nerd. Glorious. You will be missed Sir Pat.

Bushmills 25 Year Old Review by @the_spirits_club

Bushmills story begins in 1608 in County Antrim when Sir Thomas Phillips was granted a licence by the Crown to distill. The current distillery dates back to 1784 (after the odd rebuild or two) and is still known as the world's oldest licensed distillery.

Bushmills 25 YO is a whiskey you sit up a little straighter for. You stand when it arrives, look it straight in the eye and give a strong handshake too. Bushmills uses 100% malted barley, triple distilled and then aged, initially in bourbon and sherry butts for 4-6 years and then a whopping 21 odd-years in ruby port pipes. That's a glorious upbringing.

On the nose the liquid brings notes of berry dark fruits, stewed plums, honey and almonds.

The palate is velvety chocolate, maraschino cherries, blackberries, gingerbread, spiced almonds - a touch of toasted oak spice rounds things off.

The finish is lingering and warming, the port oak sweetness hangs around telling tall tales with the spice finishing later than an Irish pub lock-in.

Bushmills 25 Year Old doesn't shout, it doesn't need to. It's a layered and deeply polished, worldly, charming and elegance personified. It's a world class dram.

Dalmore Quintessence Review by @the_spirits_club

Dalmore Master Distiller Richard Paterson woke up one morning and decided that finishing whisky in one or two wine casks was so last century. Why use one or two when you can use five? The five casks in question are Zinfandel, Pinot Noir, Syrah, Merlot and Cab Sauvignon. This is chemistry and glorious ambition in a bottle.

The Nose - Imagine you've walked into a high-end patisserie at the top of the Champs-Élysées but the head sommelier from the bar next door has gone a bit loopy and thrown a mixed case of fine wines around the place because the glorious buttery pastries filled with creamy marzipan and blackberry jam were just not decadent enough. That's what hits you and stays with you. It's lovely, rich and lavish.

The palate is thick and jammy, velvety chocolate covered pralines, steamed orange pudding, pepper. Leave it for a few minutes. Breathe. Go back. Now it's even more chocolate, ginger, orange zest, stewed tea, black and red grapes.

The finish is long and lingering - dry wine and bitter chocolate, rich espresso and slightly astringent burnt sugar. Stays with you in a good way. We love this dram. You'll love this dram.

Glenfarclas 30 Year Old - @the_spirits_club review

Drinking the Glenfarclas 30 Year Old Highland Single Malt is less like a standard Tuesday night "sip" and more like a high-speed collision between your tongue and a very expensive Christmas hamper. It is a dense, unapologetically sherried masterpiece that reminds you why patience—and independent family ownership—is a virtue.

On the nose it's full-on leather bound books, a den of mahogany furniture and nana is baking a Christmas cake next door with the aroma's seeping through the hatch you've conveniently placed so you don't have to go to the next room for snacks. It's rich sugar plums with toasted bread dipped in sherry and Seville marmalade.

The palate is where Glenfarclas 30 Y0 gets even more luxuriant; thick and creamy, dried berries, rich chocolate, bitter marmalade, toasted walnuts, cinnamon pancakes - could possibly be the most decadent breakfast ever.

The finish is long and warming; oak spice, chocolate cake, sherried tobacco and a depth that belies the abv of 43%.

A truly exceptional dram and one to savour.

The Rosebank 30-Year-Old (Release 1) – The Spirits Club Review
Rosebank 30 YO is essentially liquid gold from a "ghost" distillery that has recently come back from the dead. It is a triple-distilled masterpiece that managed to survive three decades in a warehouse while the rest of us were busy inventing the internet, dealing with two recessions, getting married and putting on weight.
Tasting: A Fruit Salad in a Silk Suit with Impeccable Manners
Drinking this is like being hugged by a very wealthy orchard owner. It’s light, elegant, and gloriously smooth, avoiding the "over-oaked" bitterness that usually plagues whiskies this old.

The Nose: You’re hit with a "creamy floral freshness". It’s basically caramel wafers and citrus zest dancing in a garden of violets. It is gentle and rich, lively but peaceful. Orange zest and apple with notes of tinned peaches, millions of peaches, a hint of Chablis and my pops apple pie – he made his pastry butter with a hint of cinnamon.

The Palate: Imagine biting into a pear that was poached in syrup by a Michelin-star chef. It’s delicate and crisp, with just enough nutmeg and oak spice to remind you it’s a "grown-up" drink. Crisp Granny Smiths, butter shortbread, slightly burnt French toast and rich stewed fruit. Think a Fortnum & Mason Christmas cake flamed with rich port.

The Finish: It lingers like a polite guest, offering effusive compliments to the host, leaving behind notes of candied orange and a faint, cooling whisper of mint with a hint of pepper and cloves, nutmeg and spice, all things nice.

The Damage: Valuations & Market Reality
As of early 2026, Rosebank is officially the "cool kid" of the auction world, with prices jumping significantly (up 12.3% in January 2026 alone).
Original Retail Price: When it launched around 2020, it was roughly £1,600. Most people at the time called that "steep," but those people are now crying into their cheaper whiskies.
Average Auction You’re now looking at an average of £2,625 It is scarily easy to drink for something that costs as much as a second-hand car. It’s a flawless example of a dream Lowland

A glorious #worldbartenderday - to all who serve I salute you - to all who've gone, I miss you. To all who visit bars and make our homes yours, I salute you. Thank you. A bar is nothing without guests and a bartender is no-one without a room full of glorious delinquents.

Save hospitality, drink in your favourite place, raise a dram to your favourite person, and remember what matters. Lots of love.

The beautiful @alastair_parker in #achristmascarol @oldvictheatre - wonderful production, probably my favourite of the last four years of going.

Also nearly £2million raised for food banks over the last 8 years of production - this year the charity is @feeding_britain which has fed nearly 300,000 people; 110,000 of which are children. Go see the show, support the arts and donate a few quid.
