Pierre Pérignon (he was called Dom bc he was a Benedictine monk) was brilliant!

Back when he was making his wine (we’re talking 1660s), bubbles were considered tawdry or worse – a trick to distract from bad wine.

Plus, bottles of bubbly tended to explode in dark cellars ( the 🇫🇷 would call it “le vin du diable” - the devi|‘s wine.)

Pérignon worked tirelessly to make his wine sit still, & many myths around his discovery of sparkling wine owe more to propaganda than historical fact.

However, Pérignon’s pruning practices, his habit of tossing aside broken grapes in favor of using only the most pristine grapes for the harvest, & his technique of making white wine from red wine grapes made hugely significant advances in winemaking.

Dear Pierre - Thanks so much from all of us!!!! 💌

This Valentine’s Day
cheese board favorite is a
🇫🇷location🇫🇷!!

Like Brussels sprouts are named after
Brussels, Belgium
& like Champagne is named after the
Champagne region of France

so, too, Brie cheese is named after
the Brie 🇫🇷 region in France.

But!

Unlike Champagne🍾which has fought legal ⚖️battles for a century to protect its name, only two bries (yup, I lowercased it… you see the inexact science here) are protected.

✅Those are:
Brie de Meaux and Brie de Melun & must be sourced from the ❤️charming, artisan creamy cheese lore spot about 40 miles outside of Paris called Brie.

✅More fun facts:
According to cheese expert @chezlouloufrance (via “Brie 101” @cheeseprofessor )
Charlemagne ordered up a nice Brie for his coronation banquet circa 8th century.

💌For your romantic charcuterie board ideas this Valentine’s Day, check out @convinoboard Brie & pear galette or try @butt.erhand baked Brie with honey - CAPITALIZE Brie on the nametag.

Just another foodie tidbit I like to chat about with my friends.🤓

Before Nestlé MORSELS were invented, Nestlé sold their semi-sweet chocolate bars with a little tool to “chip” off chunks of chocolate.

The nickname, chocolate “chips” stuck.

😎 I chat about this stuff at brunch or cocktails with my friends. Now you can too.
