Corn is my love language and so is this esquites fall salad!

Ingrained (in-kerneled?) since my childhood spent shucking golden ears of Iowa corn straight from the farm. I’d sit with my younger sister and race to see who could pull off the silken hairs the cleanest.

This salad feels like a hug on those back porch moments. Creamy, with vegan butter, mayo, and topped with lots of plant-based cheese, it’s cozy in all the right ways. Fresh with chopped red onion, scallions, sliced radish, + cherry tomatoes. And plenty of protein with some added white beans.

Whip up in under 30 minutes for lunch, dinner, or your next fall gathering.

Eco anxiety? Eat more plants. Seriously.

Factory farming is one of the BIGGEST polluters on the planet and an unnecessary evil. The more veg friendly recipes you consume, the more of an impact your dollar makes.

Vegan / plant-based food is and always has been cheaper than a meat centric diet, better for you, and an easy way to make real change.

If you’ve been thinking about how you can have an impact–this is your sign. Get curious, and stay hungry.

But actually, how would I ever?

Infinite plant-based combinations, more pulses, legumes, + beans than the same factory farmed chicken breast you have in rotation.

Add some veg into that dinner routine.

Creamy red lentil vegetable coconut curry

White bean + potato gem salad

Black bean + cauliflower tacos

Spicy peanut butter tofu noodles

Chickpea salad sandwiches

I definitely have work in the morning.

Black bean + cauliflower tacos are the end of summer bite you’ve been looking for. One of the best bang-for-your buck meals using seasonal produce and pantry staples you probably already hand on hand.

Savory, with a little heat–these are packed with fiber, protein, and flavor. You’ll be wondering where this herbaceous chimichurri has been all your life.

Feel like going all in? DIY the beans, tortillas, invite your friends, and play with your food. Less time? Grab pre-made and sauté up your cauliflower in no time.
Either way, let’s eat.
