Spring decided to spend the afternoon on the Mediterranean coast 🌿🍋💙

A little taste of the Mediterranean, right at home 💙

Fresh spring blooms, soft sunshine, touches of blue and those beautiful Mediterranean details all centred around the Corelle Portofino dinnerware, inspired by seaside towns along the Italian coast.

This Mother’s Day, we were proud to bring the joy of creativity to life alongside the amazing team at @cricut_anz, at our Cricut Make Mum’s Day workshop, in partnership with @tigga_mac and @salvosstores .

The event marked the first Sydney showcase of the new Cricut Explore 5 and Cricut Joy 2, welcoming media and content creators for a hands-on celebration of connection, creativity and thoughtful gifting.

We loved sharing how Cricut offers a fun and cost-effective approach to personalised gifting, while Tigga Mac demonstrated her signature cake-writing hack using Cricut. From inspiring conversations to beautifully personalised creations, the workshop was a wonderful reminder of the power of creativity to bring people together.

Let’s make my mediterranean inspired Stuffed Eggplants in the @pyrexaus Bake N Serve dish, styled in the @corelleaus Enhancements dinner set #CorelleAU #PyrexAU #HomeCooking #PyrexPartner

Stuffed Eggplants w Garlic Yoghurt

Ingredients
3 eggplants
2 tbs olive oil
1 kg beef mince
1 brown onion, finely diced
2 tbs tomato paste
400ml tomato passata
1 tsp oregano
Cracked black pepper to taste
1 tsp chicken stock powder
500ml water
Yoghurt dressing
2 heaped tbs Greek yoghurt
1 tsp minced garlic
1 tsp tahini
Juice of ½ lemon
Pinch salt to season
Chopped parsley to garnish

Method
Slice the eggplants lengthways and use a paring knife to remove the flesh of the eggplant, finely dice the eggplant flesh and place into a bowl for later
Pre-heat the oven to 200 degrees celcius whilst making the meat sauce, and place the eggplant halves into the Pyrex Bake N Serve dish and roast briefly for about 5-10 minutes just to start the cooking process
To make the sauce saute the onion with the olive oil until translucent, add the mince and break up using a wooden spoon, cook until brown
Add the tomato paste, passata, 500ml water, chicken stock powder and eggplant flesh, simmer until reduced and the sauce is nice and thick
Spoon the meat sauce into the pre baked eggplant, drizzle with additional olive oil, and bake for 20-30 minutes or until the top is browned
To make the yoghurt dressing add the yoghurt ingredients to a bowl and stir to combine
Serve the eggplants on the Corelle Enhancements dinner set and dollop with the yoghurt dressing and chopped parsley, enjoy! by @closercommunications
